Ingredientes

  • 3 ounce diced fresh eggplant
  • 6 ounce sliced fresh peppers, red, green or possibly yellow
  • 10 x snow peas
  • 2 ounce sliced onions
  • 1/2 c. black olives
  • 1 pch salt and fresh pepper
  • 4 ounce extra virgin olive oil
  • 1 Tbsp. fresh chopped garlic
  • 1 Tbsp. fresh basil, minced
  • 1/2 Tbsp. fresh cilantro, minced Splash white wine
  • 16 ounce cooked pasta, preferably penne
  • 1/4 c. grated Parmesan cheese Fresh parsley, minced

Direcciones

  1. In a medium-sized frying pan, saute/fry eggplant, peppers, snow peas, onions, olives and salt and pepper in the oil for about four min. Add in garlic, basil, cilantro and wine and saute/fry another minute. Toss with cooked pasta, adding Parmesan cheese. Sprinkle parsley over top for presentation.
  2. Makes two to three servings.
