Ingredientes

  • 1 x 4-5 lb bottom or possibly top round of beef
  • 1 tsp Ginger, grnd
  • 1/4 c. Flour
  • 2 tsp Salt
  • 1/4 tsp Black pepper
  • 2 Tbsp. Oil
  • 2 med Onions, peeled and minced.
  • 1 can Tomatoes (16 ounce)
  • 1 c. Beef stock
  • 1 x Red pepper,seeded/minced
  • 12 x Figs,fresh

Direcciones

  1. Wipe the meat with a damp cloth. Combine the ginger, flour, salt, and pepper, and rub mix into meat.
  2. Heat oil in a large heavy pot; add in the meat and brown it well on all sides.
  3. Add in the onions, tomatoes, stock, and red pepper. Bring to a boil, cover, lower heat, and let simmer for 2-1/2 to 3 hrs, or possibly till meat is tender.
  4. Add in figs for the last 15 min of cooking.
  5. Place meat on serving platter and surround with figs. Let cooking liquid in pot cold slightly, the remove all surface grease possible. Reheat and serve separately to spoon over slices of meat.
