.%20So%20my%20parents%20made%20a%20list%20of%20all%20the%20spices%20I%20could%20need,%20went%20to%20Penzey's%20and%20stocked%20up%20for%20me.%20It%20was%20a%20truly%20inspired%20gift.%3C/p%3E%3Cp%3EAnyway,%20this%20gift%20was%20given%20to%20me%20on%20condition%20that%20I%20start%20cooking%20more%20of%20the%20curries,%20so%20over%20the%20last%20month,%20Dan%20and%20I%20have%20been%20cooking%20our%20way%20through%20the%20book,%20trying%20at%20least%20five%20new%20curries%20since%20we%20got%20back%20early%20this%20month.%20All%20the%20recipes%20have%20been%20delicious%20(with%20one%20notable%20exception,%20where%20I%20somehow%20went%20awry%20with%20the%20salt,%20but%20we%20won't%20get%20into%20that),%20but%20the%20most%20interesting%20thing%20has%20been%20getting%20more%20familiar%20with%20the%20taste%20of%20all%20the%20spices%20and%20how%20they%20fit%20together.%3C/p%3E%3Cp%3ELast%20night%20we%20found%20ourselves%20in%20a%20bare-cupboard%20situation%20and%20I%20decided%20to%20make%20our%20traditional%20bare-cupboard%20dinner%20of%20lentil%20stew.%20We%20did,%20luckily,%20have%20beautiful%20vegetables%20that%20arrived%20in%20our%20Boston%20Organics%20box%20yesterday,%20so%20I%20threw%20in%20a%20few%20of%20them%20and%20let%20myself%20be%20sort%20of%20inspired%20by%20a%20recipe%20in%20the%20Curry%20Book.%20I%20didn't%20follow%20the%20recipe%20completely,%20as%20I%20didn't%20think%20to%20consult%20a%20recipe%20until%20after%20I%20started%20the%20lentils.%3C/p%3E%3Cp%3EThe%20result%20was%20a%20very%20delicious%20spicy,%20curry-y%20lentil%20stew%20which%20stood%20on%20its%20own%20and%20satisfied%20both%20of%20our%20very%20hungry%20stomachs%20with%20aplomb.%3C/p%3E%3Cp%3ESo%20far,%20I've%20used%20prepared%20spice%20mixes%20for%20most%20of%20the%20curries%20(I%20have%20three%20different%20garam%20masalas%20that%20I've%20been%20using),%20but%20I%20think%20this%20weekend%20I'll%20be%20spending%20some%20time%20making%20my%20own%20ginger%20paste,%20grinding%20up%20some%20of%20my%20own%20spice%20mixes,%20and%20maybe%20even%20making%20some%20spiced%20tomato%20sauce,%20so%20that%20I%20can%20actually%20sample%20the%20precise%20flavor%20profile%20of%20some%20of%20these%20recipes.%20I%20used%20to%20be%20so%20intimidated%20by%20cooking%20curry,%20but%20this%20book%20makes%20it%20totally%20manageable.%20If%20you're%20at%20all%20remotely%20inclined%20to%20cook%20curry,%20buy%20this%20book.%3C/p%3E%3Cp%3ESpicy%20Indian/American%20Lentil%20Stew%3C/p%3E%3Cp%3EInspired%20by%20Five-Lentil%20Stew%20with%20cumin%20and%20cayenne%20-%20Panchmela%20Dal%20in%20660%20Curries%20by%20Raghavan%20IyerI%20call%20it%20Indian/American%20because%20I%20started%20off%20with%20the%20onion/carrot/celery%20combination%20that%20I%20would%20use%20to%20start%20any%20old%20American%20soup%20or%20stew,%20but%20ended%20with%20an%20Indian-inspired%20spice%20profile.%20I%20say%20spicy%20because%20I%20added%20cayenne%20twice.%20I'm%20not%20sure%20that%20was%20necessary.%20Feel%20free%20to%20dial%20it%20back%20to%201/8%20t%20both%20times%20or%20just%201/4%20t%20in%20the%20butter%20sauce%20at%20the%20end.%3C/p%3E%3Cp%3EHeatsome%20olive%20oil%20in%20a%20Dutch%20oven.%20When%20it's%20shimmering,%20add%20the%20onion,%20celery,%20and%20carrots.%20Saute%20until%20vegetables%20soften.%3C/p%3E%3Cp%3EAdd%20the%20lentils%20(washed%20and%20picked%20over)%20and%20broth%20to%20the%20vegetables%20and%20bring%20to%20a%20boil.%3C/p%3E%3Cp%3EStir%20in%20a%20little%20salt,%20the%20turmeric,%20ginger%20and%20cayenne.%3C/p%3E%3Cp%3EReduce%20heat,%20cover%20and%20let%20simmer%20for%20about%2030%20minutes.%3C/p%3E%3Cp%3EWhen%20the%20liquid%20is%20mostly%20absorbed%20and%20the%20lentils%20are%20mostly%20softened,%20start%20the%20baghaar.%3C/p%3E%3Cp%3EMelt%202%20T%20butter%20(or%20ghee)%20in%20a%20small%20skillet.%3C/p%3E%3Cp%3EAdd%20cumin%20seeds,%20bay%20leaves,%20garam%20masala,%20and%20cayenne%20pepper.%3C/p%3E%3Cp%3EReduce%20heat%20to%20medium%20and%20stir%20while%20the%20spices%20sizzle.%20When%20the%20cumin%20seeds%20turn%20dark%20reddish%20brown%20and%20start%20to%20smell%20toasty,%20remove%20from%20the%20heat.%20(Be%20very%20careful%20-%20it%20is%20EASY%20to%20burn%20the%20spices,%20which%20causes%20an%20unholy%20stink.%20Trust%20me.)%3C/p%3E%3Cp%3EStir%20this%20mixture%20into%20lentils,%20add%20salt%20to%20taste%20and%20serve.%3C/p%3E%3Cp%3E*my%20Curry%20Book%20tells%20me%20this%20is%20what%20it's%20called%20when%20you%20sizzle%20spices%20in%20ghee%20(butter%20in%20my%20case)%20to%20add%20to%20the%20dish%20at%20the%20last%20minute.%3C/p%3E){kind=link}
