Apple Butterscotch Crepes

Ingredientes

  • 4 x thi crepes
  • 2 x apples, Granny Smith
  • 1 Tbsp. sugar (caster)
  • 1/4 c. water
  • 1/4 tsp cinnamon, grnd
  • 50 gm butter
  • 2/3 c. brown sugar
  • 1/4 c. apple juice
  • 1/2 c. cream
  • 2 tsp rum

Direcciones

  1. Slice the apples thinly, combine in pan with sugar, water, cinnamon, bring to the boil and simmer covered 10 min or possibly till apples are tender. Drain off liquid.
  2. Heat butter in pan, add in brown sugar, apple juice and cream and stir till combined. Bring to the boil and simmer, uncovered, about 5 min till syrupy. Stir in apples and rum and heat through.
  3. Lay crepes out on serving plate and fill with apple.
  4. Fold over crepe and spoon extra sauce over.
  5. Crepes and filling can be prepared ahead and reheated in the microwave.
  6. Pears can be substituted for apples.
