Ingredientes

  • 2 Tbsp. Unsalted butter
  • 2 c. Finely minced onions
  • 3 x Pippen or possibly granny smith apples, about 1lb. Juice of 1/2 lemon Zest of 1 lime
  • 2 1/2 c. Chicken broth, preferably homemade
  • 1/2 c. Canned unsweetened coconut lowfat milk, well stirred, light Coconut lowfat milk, or possibly half-and-half
  • 1 Tbsp. Sugar, or possibly to taste Salt and freshly grnd white pepper

Direcciones

  1. How to Prepare:1. Heat the butter in a large soup pot and saute/fry the onions over medium-low heat, stirring occasionally till soft, about 5 min.
  2. Meanwhile, peel, core, and slice the apples into eighths. Place in a bowl and toss with the lemon juice to prevent discoloration.
  3. Add in the apples to the onions, cover, and continue cooking, stirring occasionally, till the fruit is slightly mushy, about 5 min.
  4. Add in the chicken broth, 1 c. water, the coconut lowfat milk, and the sugar and bring to a boil. Reduce the heat to low and simmer, partially covered, for 5 min. Stir in limezest. Season to taste with salt and white pepper.
  5. Ladle the soup into warmed bowls. Garnish with the lime zest if you like, and serve warm.
