Receta Apple Coconut Chowder

Ingredientes
- 2 Tbsp. Unsalted butter
- 2 c. Finely minced onions
- 3 x Pippen or possibly granny smith apples, about 1lb. Juice of 1/2 lemon Zest of 1 lime
- 2 1/2 c. Chicken broth, preferably homemade
- 1/2 c. Canned unsweetened coconut lowfat milk, well stirred, light Coconut lowfat milk, or possibly half-and-half
- 1 Tbsp. Sugar, or possibly to taste Salt and freshly grnd white pepper
Direcciones
- How to Prepare:1. Heat the butter in a large soup pot and saute/fry the onions over medium-low heat, stirring occasionally till soft, about 5 min.
- 2. Meanwhile, peel, core, and slice the apples into eighths. Place in a bowl and toss with the lemon juice to prevent discoloration.
- 3. Add in the apples to the onions, cover, and continue cooking, stirring occasionally, till the fruit is slightly mushy, about 5 min.
- 4. Add in the chicken broth, 1 c. water, the coconut lowfat milk, and the sugar and bring to a boil. Reduce the heat to low and simmer, partially covered, for 5 min. Stir in limezest. Season to taste with salt and white pepper.
- 5. Ladle the soup into warmed bowls. Garnish with the lime zest if you like, and serve warm.
