Apple Crostata With Cheddar Cheese

Ingredientes

  • 1 c. all-purpose flour
  • 1 tsp sugar
  • 1/4 tsp salt
  • 1/2 c. chilled unsalted butter - (1 stick) cut 1/2" pcs
  • 1 lrg egg yolk
  • 1 Tbsp. ice water or possibly more if needed
  • 1/2 tsp vanilla extract
  • 1/4 c. sugar
  • 1/4 tsp grnd cinnamon
  • 1/4 tsp grnd ginger
  • 1 1/2 lb Fuji apples - (abt 3 large) peeled, quartered, cored, cut into 1/4"-thk slices
  • 1 Tbsp. unsalted butter cut small pcs
  • 8 ounce sharp cheddar cheese cut 8 wedges

Direcciones

  1. For Crust: Mix flour, sugar, and salt in processor. Cut in butter, using on/off turns, till mix resembles coarse meal. Whisk yolk, 1 Tbsp. ice water, and vanilla extract in small bowl to blend. Add in egg mix to processor; blend till dough clumps together, adding more ice water by teaspoonfuls if dough is dry. Form dough into ball; flatten into disk. Wrap in plastic wrap; refrigerateat least 1 hour.
  2. Roll out dough on floured surface to 12-inch round. Transfer to 9-inch-diameter tart pan with removable bottom. Trim dough overhang to 1 inch; fold dough overhang in and press onto sides of pan. Pierce crust all over with fork. Chill crust for 1 hour.
  3. For Filling: Position rack in bottom third of oven and preheat to 400 degrees. Mix first 3 ingredients in bowl. Arrange apple slices in concentric circles in crust, overlapping and fitting tightly together. Sprinkle with sugar mix. Dot with butter.
  4. Bake till apples are tender and beginning to brown and crust is golden brown, about 55 min. Cold tart in pan on rack at least 45 min. (Can be made 6 hrs ahead. Let stand at room temperature.)
  5. Serve tart slightly hot or possibly at room temperature with cheese.
  6. This recipe yields 8 servings.
  7. Comments: Fuji or possibly McIntosh apples work best for this tart; other varieties may be too juicy.
