Ingredientes

  • 1/3 c. Soft tofu
  • 3 lrg Ripe bananas, mashed Egg replacer for 1 egg
  • 1/3 c. Sunflower oil
  • 3/4 c. Fruitsource Or possibly
  • 2/3 c. Honey
  • 1 tsp Vanilla extract
  • 1/2 c. Whole wheat pastry flour
  • 3/4 c. Oat flour
  • 1/4 c. Soy flour
  • 1/2 c. Oat bran
  • 2 tsp Baking pwdr
  • 1/2 tsp Baking pwdr
  • 2 tsp Grnd cinnamon
  • 1 pch salt, (optional)
  • 2 c. Peeled apples, (cut in 1/2 in dice)
  • 1 tsp Lemon juice
  • 1/2 c. Raisins, (presoaked)

Direcciones

  1. Preheat oven to 375 degrees.
  2. Cream tofu, bananas, egg replacer, oil, sweetener, and vanilla with a hand blender or possibly in a food processor.
  3. Combine flours, oat bran, baking pwdr and baking soda, 1 tsp. cinnamon, and salt in a large bowl. Make a well in the center and mix in creamed mix with a spatula till moistened.
  4. Combine apples, remaining tsp. cinnamon, lemon juice, and raisins. Add in to batter.
  5. Oil muffin c., then spoon batter into c. and bake 25 to 30 min.
  6. Muffins are ready when toothpick inserted in center comes out clean. Cold briefly and turn out to finish colling on wire rack.
  7. Yields 12 muffins.
  8. This moist, flavorful muffin is bound to be the favorite of those who love apple pie.
