Receta Apple, Potato And Cheddar Soup

- Heat oil in large saucepot; add in apples, potato, celery, onion and thyme. Saute/fry 10 min. Stir in wine and simmer 2 min; add in stock and simmer 45 min.
- Puree soup mix. Return to saucepot; over very low heat, and stir in cheese, cream, nutmeg, salt and pepper to taste. Cook just until heated through - don't allow to boil. Garnish with croutons and diced apples.
- This recipe yields 4 servings.
