Ingredientes

  • 2 med. sized tart apples, peeled, cored and coarsely minced
  • 1/2 c. sugar blended with 1 teaspoon cinnamon
  • 1 c. all purpose flour
  • 1 c. whole wheat flour
  • 1 T brown sugar
  • 3 teaspoon baking pwdr
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 2 large eggs, beaten
  • 1 c. skim lowfat milk
  • 1/2 c. vegetable oil
  • 1/4 c. baking molasses
  • 1 c. seedless raisins

  1. Sprinkle minced apples with sugar/cinnamon mix. Set aside.Fold in large bowl:

  3. Preheat oven to 400 degrees.Blend all dry ingredients well in large bowl. Blend liquid ingredients separately. Slowly stir liquid ingredients into dry ingredients. Mix in raisins, mix well.
  4. Mix in minced apple mix. Spoon into well greased muffin tins about 3/4 full. Bake about 20 min or possibly till toothpick inserted in center comes out clean. Makes about 2 dozen medium sized muffins.
