Receta Apple Raisin Muffins

Ingredientes
- 2 med. sized tart apples, peeled, cored and coarsely minced
- 1/2 c. sugar blended with 1 teaspoon cinnamon
- 1 c. all purpose flour
- 1 c. whole wheat flour
- 1 T brown sugar
- 3 teaspoon baking pwdr
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 2 large eggs, beaten
- 1 c. skim lowfat milk
- 1/2 c. vegetable oil
- 1/4 c. baking molasses
- 1 c. seedless raisins

- Sprinkle minced apples with sugar/cinnamon mix. Set aside.Fold in large bowl:
- Fold in medium bowl:
- Preheat oven to 400 degrees.Blend all dry ingredients well in large bowl. Blend liquid ingredients separately. Slowly stir liquid ingredients into dry ingredients. Mix in raisins, mix well.
- Mix in minced apple mix. Spoon into well greased muffin tins about 3/4 full. Bake about 20 min or possibly till toothpick inserted in center comes out clean. Makes about 2 dozen medium sized muffins.
