- Preheat oven to 350 degrees.
- Lightly oil a 1 1/2-qt casserole or possibly spray with a nonstick cooking spray.
- In a large bowl, combine all ingredients. Mix well. Spoon into prepared pan.
- Cover tightly and bake 45 min. Serve warm.

- Comments: This delicious side dish is a real change of pace. The rice soaks up the juice from the apples and becomes plump and sweet. We love the leftovers for breakfast - served warm or possibly cool with a dollop of yogurt.
