Apple Soup

Great fall soup, with freshly picked apples.

Ingredientes

  • 3 tbsp oil
  • 1 kohlrobi, diced
  • 3 carrots, diced
  • 2 stalks celery, diced
  • 1 sm-med size green bell pepper, diced
  • 2 tomatoes, diced or 1-15oz can diced tomatoes
  • 9 cups chicken stock
  • 6 lg green apples
  • 3 tbsp flour
  • 2/3 cup heavy cream
  • 1 tbsp sugar
  • 2-3 tbsp lemon juice
  • salt and pepper

Direcciones

  1. Heat oil in a large pot, add the kohlrabi, carrots, celery, green pepper and tomatoes, cook for 5-6 mins or til just softened.
  2. Pour in the chicken stock, bring to a boil, then reduce the heat and simmer for about 45mins.
  3. Meanwhile, peel and core the apples then chop into small cubes.
  4. Add to the pot and simmer for 15mins.
  5. Mix together the flour and cream, stir into the soup. Bring to a boil. Add suger, lemon juice and adjust salt and pepper.
