Ingredientes

  • 1/4 c. flax seed
  • 3/4 c. sifted unbleached flour
  • 1 c. whole wheat flour
  • 1/4 tsp lite salt
  • 1/4 c. sugar
  • 2 tsp baking pwdr
  • 3 x egg whites
  • 2 Tbsp. canola oil
  • 3/4 c. plain soy lowfat milk
  • 1/2 c. minced walnuts
  • 1 lrg apple diced

Direcciones

  1. Pre-heat oven to 400F. Grind the flaxseed to a coarse pwdr in a blender or possibly coffee grinder. In a bowl, sift together the flour, salt, sugar and baking pwdr. Stir in the flaxseed pwdr. In a separate bowl, beat together the Large eggs with the oil and soymilk. Add in the liquid ingredients to the dry ingredients and combine with a few swift strokes. Stir the diced apples and the walnuts into the batter. Fill oiled muffin tins two-thirds full and bake for 20-25 min.

NOTES : Can a food with this much fat be included in a heart healthy diet Yes, because these muffins are high in the right kind and correct balance of fats - essential fats and omega-3 fats - both of that are protective against heart disease. If you are watching your overall calorie intake, note the serving size is one muffin!

  6. If you omit the nuts these are only 26% fat. The oil in the nuts is good for you too, but my kids do not like nuts so I probably wouldn't use them.
