- Pre-heat oven to 400F. Grind the flaxseed to a coarse pwdr in a blender or possibly coffee grinder. In a bowl, sift together the flour, salt, sugar and baking pwdr. Stir in the flaxseed pwdr. In a separate bowl, beat together the Large eggs with the oil and soymilk. Add in the liquid ingredients to the dry ingredients and combine with a few swift strokes. Stir the diced apples and the walnuts into the batter. Fill oiled muffin tins two-thirds full and bake for 20-25 min.
