%3C/p%3E%3Cp%3EI%20found%20this%20granola%20recipe%20here%20and%20modified%20it%20slightly.%3C/p%3E%3Cp%3EThere's%20another%20granola%20recipe%20on%20my%20blog;%20it%20was%20actually%20the%20very%20first%20recipe%20I%20posted...only%20a%20year%20and%205%20days%20ago.%20%20Time%20truly%20flies%20when%20you're%20having%20fun.%20%20This%20recipe%20is%20best%20when%20eaten%20as%20a%20cereal%20with%20milk.%3C/p%3E%3Cp%3EApricot-Fig%20Granola%20Bars%3C/p%3E%3Cp%3EYields%2020-25%20squares%3C/p%3E%3Cp%3EIn%20a%20large%20bowl%20using%20a%20sturdy%20wooden%20spoon,%20mix%20together%20the%20honey,%20peanut%20butter,%20and%20coconut%20oil.%20%20Stir%20in%20the%20vanilla,%20salt%20and%20flaxseed%20meal.%20%20Add%20the%20oatmeal,%20the%20dried%20fruits,%20and%20the%20pumpkin%20seeds.%20%20Mix%20well.%3C/p%3E%3Cp%3ELine%20a%20large%20baking%20sheet%20(I%20used%20a%2017%22%20x%2012%22%20size)%20with%20parchment%20paper.%20%20Using%20the%20back%20of%20the%20spoon%20or%20a%20large%20spatula,%20FIRMLY%20press%20the%20mixture%20into%20the%20pan.%20%20(The%20harder%20you%20press,%20the%20better%20chance%20you%20have%20of%20the%20bars%20staying%20together%20after%20they%20are%20cut.)%3C/p%3E%3Cp%3EBake%20at%20325%20degrees%20for%2020-25%20minutes.%3C/p%3E%3Cp%3EThe%20longer%20the%20granola%20cools,%20the%20better%20it%20will%20stick%20together.%20%20(But%20it%20tastes%20so%20wonderful,%20no%20one%20seems%20to%20mind%20if%20they%20have%20to%20use%20a%20fork.)%3C/p%3E%3Cp%3EOptional%20Chocolate%20Step:%20%20As%20soon%20as%20you%20remove%20the%20granola%20from%20the%20oven,%20sprinkle%20a%20cup%20and%20a%20half%20of%20bittersweet%20chocolate%20chips%20over%20the%20surface.%20%20Let%20them%20sit%20and%20soften%20for%20about%205%20minutes,%20then%20spread%20the%20chocolate%20with%20a%20spatula.%20%20You%20can%20use%20less%20chocolate%20and%20only%20cover%20half%20(or%20less)%20of%20the%20bars%20like%20I%20did%20in%20the%20picture%20above.%3C/p%3E%3Cp%3E*Spray%20your%20measuring%20cup%20with%20nonstick%20spray%20before%20you%20pour%20in%20the%20honey.%20%20The%20honey%20will%20slide%20right%20out%20when%20you%20pour%20it%20into%20the%20bowl.%3C/p%3E%3Cp%3E**If%20desired,%20toast%20the%20oatmeal%20on%20a%20baking%20sheet%20at%20350%20degrees%20for%20about%2015%20minutes,%20stirring%20it%20once%20or%20twice.%20%20Then%20mix%20it%20in%20with%20the%20other%20ingredients%20as%20described%20in%20the%20recipe.%3C/p%3E%3Cp%3ELinking%20up%20at:%3C/p%3E){kind=link}
