Receta Apricot Glazed Pork Kabobs

- Stir together apricot preserves, orange liqueur and butter, simmer in a small saucepan till butter is melted. (Or possibly combine ingredients in a 2-c. glass measure: microwave on High 1 minute).
- Place pork cubes in heavy plastic bag, pour 3/4 c. apricot mix over to coat. Marinate at least 30 min. Thread pork onto 4 to 6 skewers (if using bamboo skewers, soak in water for 20 to 30 min before using).
- Grill over warm coals 10 to 12 min, turning occasionally. Baste often with the marinade. Hot remaining apricot sauce to boiling and serve alongside kabobs, if you like.
- This recipe yields 4 servings.
