Apricot Meringue Bars

Ingredientes

  • 3 cups flour
  • 1 cup sugar, divided 1 cup cold butter
  • 4 eggs, separated
  • 1 tsp vanilla
  • 2 cans (12 oz. each) apricot filling
  • 1/2 cup chopped pecans

Direcciones

  1. In a large bowl, combine the flour and 1/2 cup sugar
  2. Cut in the butter until crumbly
  3. Add the egg yolks and vanilla
  4. Mix well
  5. Press into a greased 15 x 10 inch baking pan
  6. Bake at 350 F for 12-15 minutes or until lightly browned
  7. Spread the apricot filling over the crust
  8. In a large bowl, beat the egg whites until soft peaks form
  9. Gradually add the remaining sugar, 1 tablespoon at a time
  10. Beat until stiff peaks form
  11. Spread over the apricot layer
  12. Sprinkle with the pecans
  13. Bake for 25-30 minutes or until lightly browned
  14. Cool in the pan on a wire rack
  15. Cut into the bars
