...be%20it%20a%20new%20ingredient,%20a%20new%20baking%20method%20or%20a%20new%20recipe.%3C/p%3E%3Cp%3EI%20happened%20to%20come%20across%20this%20Apricot%20Souffl%C3%A9%20Cheesecake%20recipe%20from%20a%20cookbook%20which%20I%20borrowed%20from%20the%20library(the%20second%20time)%20and%20somehow%20it%20caught%20my%20attention%20this%20time...I%20have%20no%20memories%20of%20it%20when%20I%20first%20borrowed%20the%20same%20book%20a%20couple%20of%20years%20back%20(%5E%5E%22)%3C/p%3E%3Cp%3EThere%20is%20nothing%20new%20in%20this%20recipe...there%20is%20no%20new%20ingredients%20since%20I%20have%20already%20tried%20baking%20with%20apricots.%20There%20is%20no%20new%20baking%20method%20involved%20as%20the%20preparation%20is%20similar%20to%20baking%20a%20chiffon%20cake.%20The%20only%20new%20things%20I%20could%20think%20of%20is%20the%20combination%20of%20apricots%20with%20cheesecake,%20and%20baking%20cheesecakes%20in%20ramekins.%3C/p%3E%3Cp%3EThe%20cheesecake%20rose%20beautifully,%20well%20above%20the%20rims%20of%20the%20ramekins%20while%20they%20were%20in%20the%20oven.%20They%20started%20sinking%20as%20I%20left%20them%20to%20cool.%20I%20wonder,%20if%20I%20had%20given%20each%20of%20them%20a%20bang%20on%20the%20table%20when%20they%20were%20right%20out%20of%20the%20oven,%20would%20it%20help%20to%20prevent%20them%20from%20sinking%20that%20much?%3C/p%3E%3Cp%3EIt%20is%20stated%20in%20the%20cookbook%20that%20this%20dessert%20is%20best%20served%20before%20the%20cake%20starts%20shrinking%20and%20sinking,%20which%20means%20it%20is%20best%20served%20warm%20or%20almost%20immediately%20when%20it%20comes%20out%20of%20the%20oven,%20just%20like%20a%20souffl%C3%A9.%20I%20didn't%20have%20the%20chance%20to%20sample%20the%20cake%20while%20they%20were%20still%20all%20puffed%20up.%20By%20the%20time%20I%20was%20done%20taking%20pictures,%20the%20cakes%20were%20well%20sunken.%20Nevertheless,%20the%20texture%20was%20still%20soft,%20fluffy%20and%20moist.%20I%20offered%20one%20to%20my%20younger%20child%20and%20he%20ate%20it%20in%20silence.%20We%20were%20not%20on%20speaking%20terms%20that%20day%20as%20he%20felt%20that%20it%20was%20unreasonable%20of%20me%20to%20scold%20him%20for%20not%20taking%20care%20of%20his%20things%20;(%20Anyway,%20he%20devoured%20the%20cake%20in%20no%20time%20and%20I%20noticed%20him%20licking%20up%20the%20crumbs%20from%20the%20ramekin.%20Under%20normal%20circumstances,%20he%20would%20have%20asked%20for%20a%20second%20helping.%20I%20broke%20the%20silence%20and%20offered%20him%20another%20serving.%20He%20gladly%20took%20it%20and%20enjoyed%20the%20very%20last%20crumb,%20still%20in%20silence.%3C/p%3E%3Cp%3EI%20kept%20the%20leftovers%20in%20the%20fridge%20for%20my%20elder%20child.%20When%20left%20to%20chill%20over%20night,%20the%20texture%20became%20rather%20dense,%20tasted%20rich%20and%20quite%20similar%20to%20a%20new%20york%20style%20cheese%20cake.%20I%20personally%20prefer%20the%20lighter%20version%20but%20my%20younger%20child%20liked%20both.%3C/p%3E%3Cp%3EIf%20you%20are%20keen%20to%20give%20this%20a%20try,%20I%20would%20suggest%20to%20use%20fresh%20apricots%20instead%20of%20canned%20ones.%20The%20canned%20apricots%20I%20bought%20was%20a%20tad%20too%20sour%20for%20my%20liking.%20I%20think%20to%20replace%20the%20apricots%20with%20peach%20slices%20or%20even%20strawberries%20would%20be%20a%20delightful%20variation%20as%20well.%3C/p%3E%3Cp%3EApricot%20Souffl%C3%A9%20Cheesecake%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E(makes%208)%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20170%20degC.%3C/p%3E%3Cp%3EGrease%208%20ramekins%20with%20some%20butter,%20set%20aside%20(size%20of%20ramekin:%20diameter%209cm,%20height%205cm).%3C/p%3E%3Cp%3ESieve%20cake%20flour,%20set%20aside.%3C/p%3E%3Cp%3EWash%20canned%20apricots%20halves%20(to%20remove%20the%20syrup),%20drain%20and%20set%20aside.%20If%20using%20fresh%20apricots,%20use%20a%20knife%20to%20cut%20around%20the%20fruit,%20break%20into%20halves%20and%20remove%20the%20pit.%20Wash,%20drain%20and%20set%20aside.%3C/p%3E%3Cp%3EWith%20an%20electric%20whisk%20or%20stand%20mixer,%20beat%20cream%20cheese%20in%20a%20mixing%20bowl%20until%20smooth.%20Add%20in%20the%20caster%20sugar%20and%20beat%20till%20smooth,%20stop%20to%20scrape%20down%20sides%20of%20bowl%20when%20needed.%20Add%20in%20the%20butter,%20beat%20till%20smooth.%3C/p%3E%3Cp%3EAdd%20in%20the%20egg%20yolks%20gradually%20and%20beat%20till%20incorporated.%20Beat%20in%20the%20vanilla%20bean%20paste%20or%20vanilla%20extract,%20if%20using.%3C/p%3E%3Cp%3EAdd%20half%20the%20amount%20of%20flour,%20beat%20till%20incorporated.%20Add%20half%20the%20amount%20of%20milk,%20beat%20till%20incorporated.%20Repeat%20with%20the%20remaining%20flour%20followed%20by%20the%20remaining%20milk.%20(Note:%20when%20beating%20in%20the%20milk,%20the%20batter%20may%20form%20small%20lumps%20initially,%20continue%20to%20beat%20and%20the%20lumps%20will%20dissolve.%20Alternatively,%20add%20in%20the%20milk%20gradually%20as%20you%20beat%20to%20avoid%20lumps%20from%20formin
