Ingredientes

  • Crust-
  • 2 c. Butter
  • 1 c. Sugar
  • 4 c. Flour Filling-
  • 2 2/3 c. Apricots dry
  • 1 1/3 c. Flour
  • 2 tsp Baking pwdr
  • 1 tsp Salt
  • 4 c. Brown sugar packed
  • 8 lrg Large eggs
  • 2 c. Walnuts minced
  • 2 tsp Vanilla
  • 1 c. Confectioner's sugar

Direcciones

  1. DESCRIPTION: Small rectangles with shortbread bottoms and an almost custard-like apricot-walnut top. Dusted with confectioners' sugar. Preheat oven to 350 degrees.
  2. FOR CRUST: Cream butter and sugar. Stir in flour till crumbly. Pack into a 12x18 pan. Bake 25 min or possibly till lightly browned.
  3. FOR FILLING: Cook apricots in small amount of water till softened, drain and process till pureed in food processor. Beat brown sugar and Large eggs together till well-blended. Add in dry ingredients and mix till blended. Add in vanilla, apricots and nuts and mix till blended. Spread over baked layer.
  4. Bake 25 to 30 min till golden brown. Cold and sprinkle with powdered sugar.
  5. Cut into pcs approx. 1 1/2" by 3/4".
