.%20%20If%20you%20don't%20know%20about%20The%20Daring%20Kitchen,%20be%20sure%20to%20check%20it%20out%20-%20foodies%20from%20all%20over%20the%20world%20sharing%20their%20love%20of%20food,%20recipes,%20tips%20and%20-%20once%20a%20month%20-%20cooking%20(or%20baking)%20the%20same%20thing.%3C/p%3E%3Cp%3EThe%202010%20April%20Daring%20Cooks%20challenge%20was%20hosted%20by%20Wolf%20of%20Wolf%E2%80%99s%20Den.%20She%20chose%20to%20challenge%20Daring%20Cooks%20to%20make%20Brunswick%20Stew.%20Wolf%20chose%20recipes%20for%20her%20challenge%20from%20The%20Lee%20Bros.%20Southern%20Cookbook%20by%20Matt%20Lee%20and%20Ted%20Lee,%20and%20from%20the%20Callaway,%20Virginia%20Ruritan%20Club.%20%20I%20used%20the%20Lee%20Bros.%20version%20and%20modified%20the%20recipe%20by%20using%20edamame%20beans%20instead%20of%20butter%20beans,%20all%20chicken%20thighs%20instead%20a%20chicken%20pieces%20and%20white%20wine%20to%20deglaze%20the%20pot.%20%20Try%20it,%20y'all%20-%20it's%20divine!%3C/p%3E%3Cp%3EBrunswick%20Stew%3C/p%3E%3Cp%3Eadapted%20from%20The%20Lee%20Bros.%20Southern%20Cookbook:%20Stories%20and%20Recipes%20for%20Southerners%20and%20Would-Be%20Southerners,%20by%20Matt%20Lee%20and%20Ted%20Lee%3C/p%3E%3Cp%3Eserves%206%20generously%3C/p%3E%3Cp%3ETabasco%20sauce%20to%20taste%3C/p%3E%3Cp%3E1.%20%20In%20a%20large%20stockpot%20or%20Dutch%20oven,%20fry%20the%20bacon%20over%20medium-high%20heat%20until%20it%20just%20starts%20to%20crisp.%20Transfer%20to%20a%20large%20bowl,%20and%20set%20aside.%20Add%20the%20chili%20to%20the%20bacon%20fat%20in%20the%20pot.%20Toast%20the%20chili%20until%20it%20becomes%20fragrant,%20about%20a%20minute.%20Remove%20to%20bowl%20with%20the%20bacon.%3C/p%3E%3Cp%3E2.%20%20Season%20the%20rabbit%20and%20chicken%20liberally%20on%20both%20sides%20with%20sea%20salt%20and%20pepper.%20Place%20the%20rabbit%20pieces%20in%20the%20pot%20and%20sear%20on%20all%20sides,%20until%20just%20browned,%20and%20add%20to%20the%20bowl%20with%20bacon%20and%20chili.%20%20Brown%20chicken%20thighs,%20adding%20more%20fat%20if%20needed,%20on%20all%20sides.%20Put%20the%20chicken%20in%20the%20bowl%20with%20the%20bacon,%20chiles%20and%20rabbit,%20and%20set%20aside.%3C/p%3E%3Cp%3ERabbit%20loins%20browning%20in%20bacon%20fat%3C/p%3E%3Cp%3E3.%20%20Add%20the%20white%20wine%20to%20the%20pot%20and%20deglaze%20the%20pan,%20scraping%20up%20the%20browned%20bits%20from%20the%20bottom.%20Bring%20to%20a%20boil%20and%20reduce%20by%20half.%20%20Add%206%20cups%20of%20stock,%20the%20bay%20leaf,%20celery,%20potatoes,%20chicken,%20rabbit,%20bacon,%20chili%20and%20any%20liquid%20that%20may%20have%20gathered%20at%20the%20bottom%20of%20the%20bowl%20they%20were%20resting%20in.%20Bring%20the%20pot%20back%20up%20to%20a%20rolling%20boil,%20over%20medium-high%20heat.%20Reduce%20heat%20to%20low%20and%20cover.%20%20Simmer%20for%20approximately%201%C2%BD%20hours,%20stirring%20every%2015%20minutes.%3C/p%3E%3Cp%3E4.%20%20With%20a%20pair%20of%20tongs,%20carefully%20remove%20the%20chicken%20and%20rabbit%20pieces%20to%20a%20colander%20over%20the%20bowl%20you%20used%20earlier.%20Remove%20the%20bay%20leaf,%20celery%20and%20chili%20and%20discard.%20After%20you%E2%80%99ve%20allowed%20the%20meat%20to%20cool%20enough%20to%20handle,%20carefully%20remove%20all%20the%20meat%20from%20the%20bones,%20shredding%20it%20as%20you%20go.%20Return%20the%20meat%20to%20the%20pot.%3C/p%3E%3Cp%3E5.%20%20Add%20the%20carrots,%20and%20stir%20gently,%20allowing%20it%20to%20come%20back%20to%20a%20slow%20simmer.%20Simmer%20gently,%20uncovered,%20for%20at%20least%2025%20minutes,%20or%20until%20the%20carrots%20have%20started%20to%20soften.%3C/p%3E%3Cp%3E6.%20%20Add%20onion,%20edamame,%20corn%20and%20tomatoes.%20Simmer%20for%20another%2030%20minutes,%20stirring%20every%20so%20often%20until%20the%20stew%20has%20reduced%20slightly,%20and%20onions,%20corn%20and%20beans%20are%20tender.%20Remove%20from%20heat%20and%20add%20in%20vinegar,%20lemon%20juice;%20stir%20to%20blend%20well.%20Season%20to%20taste%20with%20sea%20salt,%20pepper,%20and%20Tabasco%20sauce%20if%20desired.%20It's%20so%20thick%20and%20delicious%20that%20a%20spoon%20will%20stand%20up%20in%20the%20stew%20on%20its%20own.%3C/p%3E%3Cp%3ELook%20Ma,%20no%20hands%3C/p%3E%3Cp%3E7.%20%20You%20can%20either%20serve%20the%20stew%20immediately%20or%20refrigerate%20for%2024%20hours,%20which%20makes%20the%20flavors%20meld%20more%20and%20makes%20the%20overall%20stew%20even%20better.%20Serve%20hot,%20either%20on%20its%20own,%20or%20with%20a%20side%20of%20corn%20bread,%20over%20steamed%20white%20rice,%20with%20any%20braised%20greens%20as%20a%20side.%3C/p%3E%3Cp%3ESunday%20Chicken%20Broth%3C/p%3E%3Cp%3Efrom%20The%20Lee%20Bros.%20Southern%20Cookbook:%20Stories%20and%20Recipes%20for%20Southerners%20and%20Would-Be%20Southerners,%20by%20Matt%20Lee%20and%20Ted%20Lee%3C/p%3E%3Cp%3EMakes%20about%201%20quart%3C/p%3E%3Cp%3EBones%20and%20trimmings,%20but%20not%20giblets,%20of%20one%203%20%C2%BD-%204%20%C2%BD%20lb,%20or%2012-14%20oz%20(approx.%202%20cups)%20chicken%20bones%20and%20tr
