.%20Personally,%20I%20am%20a%20big%20fan%20of%20Rick%20Bayless,%20so%20I%20think%20you%20can%20see%20where%20MY%20vote%20lies....%3C/p%3E%3Cp%3EThis%20week%E2%80%99s%20theme%20for%20I%20Heart%20Cooking%20Clubs%20is%20Potluck,%20which%20is%20designed%20to%20give%20us%20the%20opportunity%20to%20try%20recipes%20that%20we%20have%20been%20drooling%20over%20but%20just%20haven%E2%80%99t%20quite%20fit%20any%20of%20the%20recent%20themes.%20The%20only%20hard%20part%20about%20that%20concept%20for%20me,%20is%20narrowing%20it%20down.%20There%20are%20still%20SO%20many%20recipes%20I%20want%20to%20try,%20but%20fate%20helped%20me%20make%20my%20decision%20this%20week.%3C/p%3E%3Cp%3EWhile%20Ginny%20was%20visiting%20this%20weekend,%20we%20made%20a%20batch%20of%20Creamy%20Leek%20Risotto%20from%20the%20Silver%20Spoon%20cookbook%20that%20is%20one%20of%20our%20personal%20favorites.%20Granted,%20it%20is%20not%20the%20Mushroom%20and%20Peas%20Risotto%20that%20Giada%E2%80%99s%20recipe%20calls%20for,%20but%20I%20suspect%20she%E2%80%99ll%20forgive%20me%20since%20I%E2%80%99ve%20seen%20multiple%20versions%20of%20her%20recipe.%20You%20know,%20that%20and%20the%20fact%20that%20I%E2%80%99m%20allergic%20to%20mushrooms.%3C/p%3E%3Cp%3EIf%20you%E2%80%99ve%20never%20had%20arancini,%20these%20can%20be%20made%20any%20number%20of%20ways,%20and%20it%20a%20great%20way%20to%20use%20up%20leftovers.%20The%20creamy%20leek%20risotto%20is%20wonderful%20for%20this%20because%20it%20stays%20very%20moist%20in%20the%20center%20while%20the%20outside%20fries%20up%20to%20a%20nice,%20crispy%20shell.%20Serve%20your%20arancini%20with%20a%20dish%20of%20marinara%20or%20alfredo%20sauce%20for%20dipping.%20These%20are%20terrific%20as%20an%20appetizer,%20or,%20if%20you%E2%80%99re%20me,%20a%20main%20dish%20on%20a%20night%20when%20you%20are%20already%20deep-frying%20something%20for%20the%20hubby.%3C/p%3E%3Cp%3EArancini%20di%20Riso%3C/p%3E%3Cp%3EPour%20enough%20oil%20in%20a%20heavy%20large%20saucepan%20to%20reach%20the%20depth%20of%203%20inches.%20Heat%20the%20oil%20over%20medium%20heat%20to%20350%20degrees%20F.%3C/p%3E%3Cp%3EStir%20the%20eggs,%20risotto,%20Parmesan,%20and%201/2%20cup%20of%20the%20bread%20crumbs%20in%20a%20large%20bowl%20to%20combine.%20Place%20the%20remaining%20breadcrumbs%20in%20a%20medium%20bowl.%20Using%20about%202%20tablespoons%20of%20the%20risotto%20mixture%20for%20each,%20form%20the%20risotto%20mixture%20into%201%203/4-inch-diameter%20balls.%20Insert%201%20cube%20of%20mozzarella%20into%20the%20center%20of%20each%20ball.%20Roll%20the%20balls%20in%20the%20bread%20crumbs%20to%20coat.%3C/p%3E%3Cp%3EWorking%20in%20batches,%20add%20the%20rice%20balls%20to%20the%20hot%20oil%20and%20cook%20until%20brown%20and%20heated%20through,%20turning%20them%20as%20necessary,%20about%204%20minutes.%20Using%20a%20slotted%20spoon,%20transfer%20the%20rice%20balls%20to%20paper%20towels%20to%20drain.%20Season%20with%20salt.%20Let%20rest%202%20minutes.%20Serve%20hot.%3C/p%3E%3Cp%3EJust%20look%20at%20the%20beautiful%20creamy%20center%20on%20these!Be%20careful%20%E2%80%93%20these%20puppies%20are%20going%20to%20be%20HOT%20in%20the%20center!%20They%20are%20so%20worth%20it,%20though.%20Arancini%20are%20one%20of%20the%20reasons%20I%20make%20risotto....just%20for%20the%20leftovers!%20This%20is%20my%20submission%20to%20the%20I%20Heart%20Cooking%20Clubs%20Potluck%20this%20week!%3C/p%3E){kind=link}
