.%20We%20also%20have%20a%20few%20varieties%20of%20white%20rice%20as%20well.%20We%20recently%20found%20out%20about%20this%20great%20product%20from%20Lundberg%20Family%20Farms.%20It%20is%20their%20Organic%20Jasmine%20Rice.%20Great%20product,%20good%20quality%20organic,%20non-GMO%20verified%20rice.%20If%20you%20can%20use%20enough,%20well%20you%20can%20save%20some%20money%20too%20if%20you%20buy%20in%20bulk%20from%20amazon.%20We%20get%20other%20rice%20varieties%20from%20them%20via%20Amazon.%20They%20are%20a%20sustainable%20farm%20that%20is%20fully%20nonGMO%20and%20with%20a%20lot%20of%20organic%20options.%3C/p%3E%3Cp%3EYou%20will%20love%20the%20aroma%20when%20you%20cook%20it%20just%20like%20that%20or%20use%20it%20in%20other%20steamed%20rice%20dishes%20like%20the%20Kozhukkatta.%20Kozhukkatta%20(a.k.a%20Modakam)%20is%20an%20Indian%20style%20steamed%20dumpling%20made%20with%20rice%20and%20some%20filling%20(usually%20sweet).%20My%20family%20makes%20the%20filling%20with%20jackfruit%20preserve%20and%20coconut,%20but%20since%20I%20have%20no%20way%20of%20getting%20jackfruit%20preserve%20in%20this%20part%20of%20the%20world,%20I%20substitute%20it%20with%20medjool%20dates.%20This%20is%20my%20son's%20favorite.%20I%20guess%20if%20he%20has%20to%20pick%20a%20favorite%20traditional%20Indian%20dish,%20he%20might%20pick%20this.%20This%20was%20a%20favorite%20with%20both%20of%20us%20while%20we%20were%20kids%20(and%20it%20still%20is).%20I%20usually%20make%20it%20with%20red%20rice,%20but%20today%20I%20just%20wanted%20that%20nice%20aroma%20to%20fill%20my%20kitchen%20and%20went%20for%20the%20Jasmine%20rice.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EDrain%20the%20rice,%20and%20grind%20it%20along%20with%202%20cups%20of%20water%20and%20salt%20to%20a%20fine%20batter.%3C/p%3E%3Cp%3EAdd%20the%20batter%20to%20a%20saucepan%20and%20cook%20on%20medium%20heat%20stirring%20continuously.%20In%20about%2010%20minutes,%20the%20batter%20will%20thicken%20and%20form%20a%20dough.%20Remove%20from%20flame%20when%20it%20is%20still%20a%20little%20moist.%20Keep%20it%20covered%20for%20about%2010%20minutes.%20The%20extra%20moisture%20will%20be%20absorbed%20this%20way.%3C/p%3E%3Cp%3EAfter%2010%20minutes,%20mix%20and%20mash%20the%20dough%20well%20with%20a%20spoon.%20Make%20sure%20there%20is%20no%20extra%20moisture.%20Transfer%20the%20dough%20to%20a%20bowl%20and%20keep%20aside%20to%20cool%20down%20a%20little%20bit.%3C/p%3E%3Cp%3EMeanwhile,%20chop%20the%20dates,%20and%20mash%20it%20with%20a%20wooden%20spoon%20(you%20can%20use%20your%20food%20processor%20to%20do%20this%20part).%20Add%20coconut%20and%20cardamom%20powder,%20and%20mix%20well.%20Divide%20into%2012%20equal%20parts%20and%20roll%20them%20into%20balls.%3C/p%3E%3Cp%3EBy%20now,%20the%20dough%20should%20be%20cold%20enough%20for%20you%20to%20handle.%20Slightly%20knead%20the%20dough%20with%20your%20hands.%20If%20you%20feel%20the%20dough%20is%20too%20sticky,%20then%20apply%20coconut%20oil%20on%20your%20palm.%20Divide%20into%2012%20equal%20parts%20and%20roll%20into%20balls.%3C/p%3E%3Cp%3ETake%20each%20rice%20ball,%20flatten%20on%20your%20palm.%20Keep%20the%20date%20ball%20in%20the%20middle%20and%20fold%20to%20cover%20the%20date%20ball%20completely.%20Then%20roll%20nicely%20your%20palm.%3C/p%3E%3Cp%3ERepeat%20for%20remaining%20rice%20and%20date%20balls.%3C/p%3E%3Cp%3ESteam%20them%20on%20a%20steamer,%20pasta%20boiler%20or%20Idli%20cooker%20for%20about%2012%20minutes.%3C/p%3E%3Cp%3EServe%20as%20a%20snack%20or%20breakfast.%20Enjoy%20!!%3C/p%3E){kind=link}
