Aromatic Tomato Sauce

Ingredientes

  • 4 Tbsp. Butter
  • 1 sm White onion or possibly red onion, chopped
  • 1 med Carrot, peeled, chopped
  • 1 med Stalk celery, chopped
  • 3 Tbsp. Tomato paste
  • 1 can (28-ounce) tomatoes, juice reserved, tomatoes seeded then crushed Salt and grnd black pepper

Direcciones

  1. Heat 3 Tbsp. butter in a large saucepan. Add in onion, carrot, and celery- saut6 gently till softened, but not browned, about 10 min.
  2. Stir in tomato paste, then tomatoes and juice and wine. Simmer, partially covered, and stir frequently, till thickened to sauce consistency, about 45 min. Puree by passing through a food mill. Return to simmer-, season to taste with salt and pepper, before serving, stir in remaining butter.

  6. NOTES : This elegant, fragrant sauce is suitable for fresh, dry, or possibly stuffed pasta. If you don't have a food mill, the sauce can be pureed in a food processor, although the result will be less refined.
