- Cook the rice using only half of the lowfat milk, with the green lime rind. Be patient and cook it at medium-low, till the rice is very soft. Try not too move it too much, but do stir a little, occasionally.
- If it was necessary, you may add in some cool lowfat milk, if the rice has absorbed all the liquid.
- Once the rice is cooked, add in the rest of the lowfat milk, the cinnamon stick, and the sugar. Stir to make sure everything's mixed.
- Continue with medium-low heat, till you see it gets a thick texture.
- After which, turn off the heat and leave it alone till it cools down.

- "Arroz con leche" (Rice with lowfat milk, literally) is a very popular dessert in Mexico, and I believe it is also in most of Latin America and there is also a similar thing in India. I hope you like it.
- There are many minor variations, one of the most popular is the addition of a c. of raisins. Personally, I like it without raisins.
