Ingredientes

  • 1 Tbsp. vegetable oil
  • 2 x carrots peeled, and thinly sliced
  • 1 c. green onions sliced
  • 3 c. cooked rice
  • 5 x roasted garlic cloves peeled, mashed
  • 2 x roasted red pepper quarters diced
  • 1 tsp grnd ginger
  • 2 c. diced roasted ham
  • 1 c. diced roasted chicken
  • 2 Tbsp. rice or possibly cider vinegar
  • 1 Tbsp. soy sauce
  • 1/4 tsp salt
  • 1/4 c. coarsely-minced peanuts

Direcciones

  1. In a large skillet, heat the oil over medium heat. Add in the carrots and onions. Cook, stirring, 5 min. Stir in the rice, garlic, peppers, and ginger. Cook, stirring constantly, till the rice is warm and begins to get crusty. Stir in the ham and chicken.
  2. In a small bowl, stir together the vinegar, soy sauce, and salt. Add in to the pan and stir till the rice is coated. Stir in the peanuts and serve.
  3. This recipe yields 4 servings.
