%3C/p%3E%3Cp%3EWhen%20I%20was%20a%20young%20sprout,%20my%20mom%20taught%20me%20a%20great%20trick%20I%20could%20put%20right%20up%20my%20sleeve:%20you%20can%20use%20applesauce%20to%20replace%20the%20oil%20in%20boxed%20mixes.%20It's%20great%20because%20if%20you're%20in%20a%20pinch%20and%20you're%20out%20of%20oil%20(or%20other%20liquid%20fat,%20including%20melted%20butter),%20applesauce%20can%20swoop%20in%20and%20save%20the%20day.%20I%20often%20bake%20with%20it%20because%20it%20works%20like%20a%20fat%20with%20the%20benefit%20of%20having%20no%20fat;%20this%20means%20you%20preserve%20the%20flavor%20of%20a%20tasty%20baked%20good%20while%20cutting%20out%20obscene%20amounts%20of%20fat.%20No%20complaints%20here!%20Applesauce%20also%20works%20great%20because%20it%20adds%20a%20dense%20moisture%20to%20foods%20and%20adds%20depth%20to%20the%20final%20product's%20flavor%20profile%20without%20altering%20the%20taste%20itself.%20All%20in%20all,%20these%20are%20all%20great%20things!%3C/p%3E%3Cp%3EWhen%20I%20decided%20to%20go%20the%20vegan%20route%20and%20was%20looking%20for%20eggs%20substitutes,%20I%20was%20shocked%20to%20see%20that%20applesauce%20can%20also%20be%20used.%20I%20should%20caution%20that%20applesauce%20cannot%20be%20used%20universally%20as%20an%20egg%20substitute;%20as%20Isa%20Chandra%20Moskowitz%20so%20eloquently%20stated%20in%20Vegan%20with%20a%20Vengeance,%20it%20helps%20to%20determine%20whether%20eggs%20are%20used%20in%20a%20recipe%20to%20bind%20the%20ingredients%20together%20or%20whether%20the%20eggs%20also%20leaven.%20As%20long%20as%20the%20eggs%20were%20used%20just%20to%20bind,%20applesauce%20is%20great.%20Therefore,%20I%20find%20that%20applesauce%20works%20well%20in%20quick%20breads%20(like%20pumpkin%20bread),%20cakes,%20and%20some%20%22heftier%22%20cookies,%20like%20the%20Oatmeal%20Banana%20Cookies%20and%20the%20Oatmeal%20Cranberry%20White%20Chocolate%20Chunk%20cookies.%20The%20other%20reason%20I%20like%20to%20use%20applesauce%20as%20an%20egg%20replacer%20is%20because%20I%20cut%20down%20on%20food%20waste;%20whenever%20I%20would%20buy%20a%20dozen%20eggs%20or%20egg%20beaters,%20they%20almost%20always%20went%20bad%20before%20I%20could%20finish%20using%20them.%20I%20don't%20have%20that%20problem%20with%20applesauce,%20or%20if%20I%20have%20a%20bunch,%20I%20can%20freeze%20the%20applesauce%20until%20I%20need%20to%20bake%20with%20it.%3C/p%3E%3Cp%3EThis%20all%20said,%20I%20wouldn't%20use%20applesauce%20to%20replace%20both%20the%20fat%20and%20the%20eggs%20in%20a%20recipe;%20I%20would%20figure%20out%20which%20role%20you%20want%20it%20to%20play%20and%20then%20determine%20a%20substitute%20for%20the%20other%20product.%20For%20example,%20with%20rare%20exception,%20I%20tend%20to%20use%20applesauce%20as%20an%20egg%20replacer%20when%20the%20recipe%20calls%20for%20a%20solid%20fat.%20Applesauce%20can%20only%20replace%20liquid%20fats,%20and%20I%20can%20use%20Earth's%20Balance%20as%20a%20great%20dairy%20replacment.%20However,%20if%20the%20recipe%20calls%20for%20oil,%20I%20almost%20always%20replace%20the%20oil%20with%20applesauce%20to%20cut%20down%20on%20fat%20and%20then%20play%20around%20with%20other%20egg%20substitutes,%20like%20bananas%20or%20soy%20yogurt.%3C/p%3E%3Cp%3ESo,%20appropriately,%20to%20further%20today's%20celebration%20of%20applesauce,%20I%20am%20including%20a%20recipe%20for%20homemade%20unsweetened%20applesauce,%20with%20tips%20for%20how%20to%20sweeten%20it,%20if%20that's%20your%20cup%20of%20tea.%20I%20played%20around%20with%20this%20recipe%20over%20the%20weekend.%20My%20wonderful%20mom%20offered%20to%20pick%20up%20%22some%22%20apples%20for%20me%20when%20she%20went%20apple%20picking%20-%20she%20very%20generously%20gave%20me%20a%20bushel!%20So%20needless%20to%20say,%20I'm%20trying%20to%20put%20those%20apples%20to%20good%20use.%20Similarly,%20if%20you%20ever%20find%20you%20have%20a%20couple%20of%20apples%20in%20the%20fridge%20that%20are%20not%20much%20longer%20for%20this%20world,%20you%20can%20save%20them%20by%20scaling%20this%20recipe%20down%20and%20making%20some%20applesauce.%3C/p%3E%3Cp%3EI%20should%20also%20note%20that%20unsweetened%20applesauce%20-%20which%20is%20literally%20just%20water%20and%20apples%20-%20is%20dog-safe.%20You%20can%20freeze%20it%20and%20give%20it%20to%20the%20pups%20like%20ice%20cream.%20I'm%20not%20so%20sure%20if%20unsweetened%20applesauce%20is%20universally%20liked%20by%20dogs,%20though.%20I%20made%20some%20applesauce%20for%20Sheila%20and%20Lucy%20over%20the%20weekend%20and%20gave%20them%20an%20unfrozen%20version,%20and%20they%20were%20kind%20of%20confused.%20They%20clearly%20really%20wanted%20to%20like%20it,%20but%20they%20had%20never%20seen%20anything%20with%20that%20kind%20of%20texture%20before,%20so%20they%20were%20a%20little%20weirded%20out%20by%20how%20it%20looked.%20No%20matter;%20it%20was%20tasty%20to%20this%20human.%20:)%3C/p%3E%3Cp%3EPlease%20note,%20if%20you%20do%20choose%20to%20go%20beyond%20this%20recipe%20and%20add%20other%20ingredients,%20please%20don't%20feed%20it%20to%20your%20dog.%3C/p%3E%3Cp%3E(hints%20for%20sweetening%20for%20a%20human-only%20version%20are%20at%20the%20end)%3C/p%3E%3Cp%3E1)%20If%20you%20please,%20remove%20the%20skins.%20Some%20people%20like%20sauce%20with%20the%20skins%20on,%20but%20others%20think%20it%20is%20weird%20to%20have%20skins%20floating%20around%20their%20sauce.%20This%20is%20a%20judgment%20call%20on%20your%20part.%3C/p%3E%3Cp%3E2)%20Core%20the%20apples%20and%20cut%20into%20bite%20size%20pieces.%20For%20reference,%20I%20often%20use%20an%20apple%20corer%20that%20also%20yields%208%20individual%20slices;%20I%20cut%20each%20of%20those%20slices%20into%203%20pieces,%20and%20that%20is%20enough.%20Don't%20feel%20like%20you%20have%20to%20do%20a%20crazy%20dice.%3C/p%3E%3Cp%3E3)%20Put%20apples%20in%20a%20pot%20with%20one%20cup%20of%20water%20and%20cover.%20Bring%20to%20a%20boil.%3C/p%3E%3Cp%3E4)%20When%20boiling,%20give%20the%20apples%20a%20stir%20(they%20should%20start%20to%20be%20mushy%20at%20this%20point),%20turn%20the%20heat%20down%20so%20the%20water%20is%20simmering,%20cover,%20and%20simmer%20for%2020%20minutes.%20Stir%20occasionally.%3C/p%3E%3Cp%3EThat's%20it!%20You%20can%20easily%20scale%20this%20recipe%20up%20or%20down%20and%20freeze%20what%20you%20don't%20want.%3C/p%3E%3Cp%3EIf%20you%20like%20a%20little%20sweetness%20in%20your%20sauce,%20at%20the%20end%20of%20the%2020%20minutes%20simmering,%20you%20can%20add%20a%20little%20white%20and/or%20brown%20sugar%20and%20some%20cinnamon%20to%20taste;%20mix%20until%20dissolved,%20and%20you're%20done.%20Some%20people%20also%20like%20cloves,%20but%20I%20think%20cloves%20are%20gross,%20so%20I%20wouldn't%20know%20about%20that.%20:)%20Just%20remember,%20if%20you%20add%20these%20ingredients,%20this%20recipe%20is%20no%20longer%20dog%20safe.%3C/p%3E){kind=link}
