Ingredientes

  • 2 1/2 c. diagonally-sliced asparagus
  • 2 c. torn endive leaves
  • 2 sm oranges peeled, and sliced into rings
  • 1 sm red onion very thinly sliced
  • 1/3 c. raspberry vinegar
  • 2 Tbsp. canola oil
  • 1 Tbsp. orange juice
  • 1 Tbsp. sugar Salt to taste Freshly-grnd black pepper to taste

Direcciones

  1. To a large pot of boiling water, add in the asparagus. Blanch for 1 minute. Drain and plunge asparagus into a bowl of cool water. Drain again. Dry the asparagus.
  2. Combine the liquid removed asparagus with the endive, oranges, and red onion.
  3. Whisk together the dressing ingredients. Add in dressing to the asparagus endive mix. Toss well and serve.
