Asparagus Salad With Walnut Oil Vinaigrette

Ingredientes

  • 1/4 c. white wine vinegar
  • 1 Tbsp. chopped shallot
  • 2 tsp Dijon mustard
  • 3/4 tsp salt
  • 1/2 tsp freshly-grnd black pepper
  • 1/2 c. vegetable oil
  • 1/4 c. walnut oil
  • 2 lb asparagus trimmed, and steamed till just tender
  • 1/3 c. toasted minced walnuts
  • 1 Tbsp. minced fresh parsley leaves Salt to taste Freshly-grnd black pepper to taste

Direcciones

  1. In a large bowl whisk together the vinegar, shallot, mustard, salt and pepper. While continuing to whisk, add in the vegetable oil in a very thin stream, whisking constantly. Whisk in the walnut oil.
  2. Place asparagus on platter and pour dressing over asparagus. Garnish with walnuts and parsley. Taste and adjust seasoning if necessary. Serve immediately.
  3. This recipe yields 6 servings.
