Ingredientes

  • 1 med Aubergine
  • 1/4 c. Oil
  • 2 Tbsp. Butter
  • 1 c. Minced onion
  • 2 x Cloves garlic, crushed
  • 1 can (16-ounce) whole tomatoes
  • 1/2 c. Minced parsley
  • 1/4 c. Lemon juice
  • 1 tsp Nutmeg
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Direcciones

  1. Peel aubergine and cut in 1/2 inch cubes. In heavy skillet, saute/fry aubergine in oil and add in butter till lightly browned. Remove. Saute/fry onion and garlic till soft. Return aubergine and add in can of tomatoes, liquid removed. If fresh tomatoes are available, use them. Add in rest of ingredients. Bring to a boil, reduce heat and simmer 15 min. Stir.
