Receta Aubergine A La Grecque

Ingredientes
- 1 med Aubergine
- 1/4 c. Oil
- 2 Tbsp. Butter
- 1 c. Minced onion
- 2 x Cloves garlic, crushed
- 1 can (16-ounce) whole tomatoes
- 1/2 c. Minced parsley
- 1/4 c. Lemon juice
- 1 tsp Nutmeg
- 1 tsp Salt
- 1/2 tsp Black pepper
Direcciones
- Peel aubergine and cut in 1/2 inch cubes. In heavy skillet, saute/fry aubergine in oil and add in butter till lightly browned. Remove. Saute/fry onion and garlic till soft. Return aubergine and add in can of tomatoes, liquid removed. If fresh tomatoes are available, use them. Add in rest of ingredients. Bring to a boil, reduce heat and simmer 15 min. Stir.
