Aubergine And Meat Patties Parmigiana

Ingredientes

  • 2 Tbsp. Margarine, or possibly extra virgin olive oil
  • 1/2 c. Minced onions
  • 1 x Clove garlic, minced/crushed
  • 16 ounce Can tomatoes
  • 8 ounce Can tomato sauce
  • 1 Tbsp. Sugar
  • 1/2 Tbsp. Salt
  • 1 tsp Dry oregano
  • 1 tsp Dry basil
  • 1 1/2 lb Aubergine, washed/in 1/2"slices
  • 1/4 c. Flour
  • 1 tsp Seasoned salt
  • 1/8 tsp Pepper
  • 2 Tbsp. Warm extra virgin olive oil
  • 1 1/2 lb Grnd chuck
  • 1 x Egg, beaten
  • 1/4 tsp Salt
  • 1/2 c. Soft bread crumbs, (1 slice)
  • 1/4 c. Shredded Parmesan cheese
  • 4 ounce Mozzarella or possibly Provolone cheese

Direcciones

  1. Sauce: In two qt saucepan, in butter or possibly olive ol, saute/fry onion and garlic for 5 min. Add in toamtoes, tomato sauce, oregano, basil and pepper. Bring to a boil. Reduce heat and simmer, uncovered fro 10 min.
  2. Meanwhile, wash aubergine and cut into slices. Combine flour, seasoned salt and pepper. Coat aubergine with mix. In warm oil in skillet, saute/fry aubergine, a few slices at a time. Add in more oil as needed . Remove as brown.
  3. Preheat oven to 350 F.
  4. Meat Patties: In medium bowl, combine grnd chuck, egg, bread crumbs and salt. Shape into 8 patties, 1/2" thick. In medium skillet (can used skillet used for aubergine) , without added fat, brown meat patties on both sides.
  5. Spoon 1/2 of tomato sauce into a shallow round or possibly oval 10" baking dish.
  6. Arrange aubergine and meat patties alternately around side of dish. Spoon rest of sauce on top. Sprinkle with grated Parmesan and top with mozzarella or possibly Provolone cheese slices.
  7. Bake, uncovered for 20-25 min till cheese is melted and golden brown.
  8. Serving Ideas : Serve with warm bread and tossed green salad.
  9. NOTES : This is delicious!!!!
