,%20but%20we%E2%80%99ve%20spent%20a%20lot%20of%20time%20travelling%20so%20far%20this%20year%20which%20has%20made%20it%20tricky%20to%20find%20vegan%20things%20to%20eat%20%E2%80%93%20there%20are%20only%20so%20many%20things%20I%20can%20think%20of%20to%20eat%20in%20the%20car%20(I%E2%80%99ll%20admit,%20there%20have%20been%20a%20lot%20of%20crisps%20consumed%E2%80%A6).%20However%20now%20that%20we%E2%80%99re%20back%20home%20for%20at%20least%20a%20little%20while,%20I%E2%80%99m%20able%20to%20plan%20out%20our%20meals%20more%20thoroughly%20and%20stock%20the%20fridge%20properly.%20Cooking%20proper%20meals%20has%20definitely%20helped%20curb%20my%20cheese%20cravings!%3C/p%3E%3Cp%3ESo.%20Aubergine%20stew.%20I%20love%20it.%20I%20couldn%E2%80%99t%20love%20aubergine%20any%20more%20than%20I%20do.%20A%20lot%20of%20people%20seem%20to%20have%20something%20against%20aubergine,%20but%20I%20think%20that%E2%80%99s%20just%20because%20they%E2%80%99re%20put%20off%20by%20the%20idea%20of%20having%20to%20salt%20it%20and%20leave%20it%20for%20half%20an%20hour%20before%20it%20can%20be%20used.%20That%20would%20totally%20put%20me%20off%20too,%20but%20here%E2%80%99s%20a%20little%20confession:%20I%20never,%20ever%20salt%20my%20aubergines.%20I%E2%80%99m%20too%20lazy,%20and%20I%20don%E2%80%99t%20think%20ahead,%20so%20when%208pm%20rolls%20around%20and%20I%20think%20%E2%80%98oh,%20I%20should%20probably%20make%20some%20dinner%E2%80%99,%20the%20last%20thing%20I%20want%20to%20do%20is%20wait%20another%20half%20an%20hour%20for%20my%20aubergine%20to%20sit%20in%20some%20salt.%3C/p%3E%3Cp%3EI%20know,%20I%20know,%20that%20probably%20makes%20me%20a%20terrible%20person%20(or%20at%20least%20a%20terrible%20cook),%20but%20I%E2%80%99ve%20never%20had%20a%20problem%20with%20using%20aubergine%20without%20salting.%20If%20you%20cook%20it%20for%20long%20enough%20(which%20actually%20is%20only%20twenty%20minutes%20or%20so,%20before%20I%20put%20you%20off),%20it%20cooks%20down%20into%20soft%20and%20juicy%20chunks%20that%20are%20absolutely%20perfect%20in%20stew.%3C/p%3E%3Cp%3EThis%20tomatoey%20stew%20is%20irresistibly%20rich%20and%20went%20really%20well%20with%20some%20pasta,%20but%20I%E2%80%99m%20thinking%20bulgur%20wheat%20would%20be%20a%20great%20accompaniment%20too%20%E2%80%93%20or%20just%20have%20it%20on%20its%20own%20with%20some%20crusty%20bread%20for%20dipping.%20It%E2%80%99s%20thick%20and%20sticky,%20and%20is%20full%20of%20my%20favourite%20Italian%20flavours%20like%20black%20olives,%20capers,%20and%20basil.%20I%20also%20topped%20it%20with%20some%20pine%20nuts%20since%20I%20love%20a%20bit%20of%20crunch.%3C/p%3E%3Cp%3ELiterally%20kept%20me%20happy%20for%20hours,%20with%20a%20nice%20big%20red%20ring%20around%20my%20mouth.%3C/p%3E%3Cp%3EAubergine%20stew%20with%20olives%20and%20capers%3C/p%3E%3Cp%3EAuthor:%20Becca%20@%20Amuse%20Your%20Bouche%3C/p%3E%3Cp%3ERecipe%20type:%20Main%20meal%3C/p%3E%3Cp%3EServes:%202%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3EHeat%20the%20oil%20in%20a%20saucepan%20or%20large%20frying%20pan,%20and%20cook%20the%20onion,%20garlic%20and%20aubergine%20over%20a%20medium-low%20heat%20for%20around%2010%20minutes,%20stirring%20occasionally,%20until%20the%20vegetables%20are%20soft%20and%20just%20beginning%20to%20caramelise.%3C/p%3E%3Cp%3EAdd%20the%20olives,%20capers,%20passata,%20stock,%20agave%20and%20basil,%20and%20bring%20to%20a%20simmer.%20Season%20with%20plenty%20of%20black%20pepper.%20Cook%20for%20a%20further%20fifteen%20minutes%20or%20so,%20until%20the%20mixture%20has%20thickened%20and%20the%20aubergine%20is%20very%20soft.%3C/p%3E%3Cp%3EServe%20with%20pasta,%20bulgur%20wheat%20or%20bread,%20topped%20with%20parsley%20and%20pine%20nuts.%3C/p%3E%3Cp%3E3.2.2265%3C/p%3E%3Cp%3EIf%20you%E2%80%99re%20in%20the%20mood%20for%20a%20warming%20winter%20stew,%20try%20this%20mushroom%20and%20walnut%20stew%20with%20cheesy%20cobbler%20topping:%3C/p%3E){kind=link}
