Ingredientes

  • 1 head bibb lettuce, separated
  • 2 x Belgian endives, separated
  • 1 head radicchio, separated, or possibly 1 more endive
  • 1/2 x Sweet red pepper, or possibly green
  • 1/2 x White or possibly spanish onion
  • 2 x Avocados
  • 1/4 c. Orange juice
  • 1 Tbsp. Red wine vinegar
  • 1 tsp Dijon mustard
  • 1/2 tsp Salt
  • 1 x Clove garlic, chopped
  • 1 dsh Warm pepper sauce
  • 1/2 c. Extra virgin olive oil

Direcciones

  1. Buy the avocados in plenty of time for them to ripen at room temperature.
  2. Prepare the Citrus Dressing ahead and have all the salad ingredients washed and dry.
  3. Citrus Dressing: In bowl, stir together orange juice, vinegar, mustard, salt, garlic and warm pepper sauce; whisk in oil. (Dressing can be covered and refrigerated for up to 2 days.)
  4. In large salad bowl, arrange Bibb lettuce, endive and radicchio. Cut red pepper into thin strips and onion into thin rings; add in to bowl. Peel and pit avocados; cut into bite-size cubes and sprinkle over salad. Drizzle with sufficient dressing to moisten; toss well.
  5. Makes about 8 servings.
