,%20but%20I%20always%20think%20I%20should%20be%20creative%20with%20them%20more%20often.%20So%20to%20help%20me%20enjoy%20Veganuary,%20I%20thought%20I%E2%80%99d%20make%20something%20imaginative%20with%20one%20of%20my%20favourite%20vegetables%20(or,%20if%20you%20want%20to%20get%20technical,%20fruits),%20and%20I%20made%20this%20gorgeous%20avocado%20risotto%20%E2%80%93%20it%E2%80%99s%20creamy%20and%20indulgent,%20and%20totally%20vegan!%3C/p%3E%3Cp%3EHow%20do%20you%20make%20vegan%20risotto?%3C/p%3E%3Cp%3ERisotto%20might%20not%20be%20the%20first%20dish%20that%20comes%20to%20mind%20when%20you%20think%20about%20vegan%20food%20%E2%80%93%20it%E2%80%99s%20often%20loaded%20up%20with%20heaps%20and%20heaps%20of%20cheese.%20And%20while%20I%20can%20appreciate%20a%20good%20amount%20of%20cheese%20as%20much%20as%20the%20next%20person%20(%E2%80%A6okay,%20probably%20more),%20it%E2%80%99s%20not%20exactly%20vegan-friendly.%3C/p%3E%3Cp%3EBut%20luckily,%20a%20lot%20of%20the%20creaminess%20of%20a%20good%20risotto%20actually%20comes%20from%20the%20rice%20itself,%20not%20from%20added%20dairy.%20When%20you%20stir%20the%20rice,%20it%20releases%20its%20starch,%20and%20helps%20to%20create%20that%20beautiful%20creamy%20%E2%80%98sauce%E2%80%99%20%E2%80%93%20no%20cheese%20required.%3C/p%3E%3Cp%3EBasic%20risotto%20mixture%3C/p%3E%3Cp%3EThis%20avocado%20risotto%20recipe%20begins%20with%20a%20basic%20%E2%80%98white%E2%80%99%20risotto%20%E2%80%93%20just%20onions%20and%20garlic,%20cooked%20with%20arborio%20rice%20and%20good%20quality%20vegetable%20stock.%20Add%20the%20stock%20a%20little%20at%20a%20time,%20and%20stir%20the%20dish%20regularly,%20for%20perfectly%20creamy%20rice.%20You%20can%20even%20add%20a%20good%20glug%20of%20white%20wine%20if%20you%20fancy%20it.%3C/p%3E%3Cp%3EOf%20course,%20you%20could%20just%20stop%20there%20%E2%80%93%20you%E2%80%99ve%20already%20made%20a%20simple%20vegan%20risotto.%20It%E2%80%99s%20delicious%20as%20is,%20but%20it%20doesn%E2%80%99t%20have%20a%20huge%20amount%20of%20flavour,%20so%20you%E2%80%99ll%20probably%20want%20to%20take%20it%20up%20a%20notch%20%E2%80%93%20and%20what%20better%20than%20to%20add%20the%20creamiest%20vegetable%20on%20the%20planet,%20avocado!%3C/p%3E%3Cp%3EAvocado%20risotto%3C/p%3E%3Cp%3EYou%E2%80%99ll%20want%20to%20use%20nice,%20ripe%20avocados%20for%20this%20avocado%20risotto%20%E2%80%93%20you%20want%20them%20to%20be%20slightly%20soft%20to%20the%20touch.%20If%20you%20use%20unripe%20avocados,%20you%E2%80%99ll%20just%20end%20up%20with%20hard%20pieces%20of%20avocado%20in%20the%20risotto,%20and%20it%20won%E2%80%99t%20actually%20add%20to%20the%20creaminess%20of%20the%20dish%20at%20all.%3C/p%3E%3Cp%3EIf%20you%20use%20super%20ripe%20avocados,%20though,%20they%20almost%20melt%20down%20through%20the%20rice,%20and%20really%20help%20to%20amp%20up%20the%20luxury.%20Some%20of%20the%20avocado%20remains%20in%20pieces,%20and%20the%20rest%20gets%20mashed%20right%20through%20the%20rice.%3C/p%3E%3Cp%3EFinally,%20just%20add%20a%20good%20squeeze%20of%20lemon%20juice,%20some%20fresh%20herbs,%20and%20plenty%20of%20salt%20and%20pepper,%20and%20you%E2%80%99re%20done!%20The%20flavour%20is%20mild%20and%20creamy,%20and%20the%20avocados%20really%20shine%20through%20%E2%80%93%20perfect%20for%20avocado%20lovers!%3C/p%3E%3Cp%3ECan%20I%20make%20risotto%20in%20advance?%3C/p%3E%3Cp%3EAbsolutely!%20Risotto%20is%20actually%20one%20of%20my%20favourite%20things%20to%20cook%20for%20dinner%20parties,%20because%20you%20can%20have%20it%20all%20cooked%20in%20advance,%20then%20just%20reheat%20it%20when%20your%20guests%20are%20ready.%3C/p%3E%3Cp%3EThe%20only%20thing%20to%20remember%20with%20this%20particular%20risotto%20is%20that,%20despite%20the%20squeeze%20of%20lemon,%20avocado%20does%20brown%20a%20little%20when%20it%E2%80%99s%20exposed%20to%20the%20air%20for%20long%20periods%20%E2%80%93%20so%20if%20you%20cook%20this%20risotto%20the%20day%20before%20you%20need%20it,%20and%20leave%20it%20in%20the%20fridge,%20it%20will%20definitely%20look%20less%20attractive%20the%20next%20day.%3C/p%3E%3Cp%3EIf%20you%20do%20need%20to%20cook%20your%20risotto%20in%20advance,%20I%E2%80%99d%20just%20stop%20halfway%20through%20the%20recipe,%20and%20then%20add%20the%20avocado%20at%20the%20last%20minute,%20when%20you%20reheat%20the%20rice.%20As%20with%20all%20rice%20dishes,%20make%20sure%20you%20cool%20it%20quickly,%20store%20it%20in%20the%20fridge,%20and%20then%20reheat%20it%20really%20thoroughly%20before%20serving.%3C/p%3E%3Cp%3EAnd%20there%20you%20have%20it!%20A%20rich%20and%20creamy%20avocado%20risotto%20that%20makes%20the%20perfect%20vegan%20comfort%20food.%3C/p%3E%3Cp%3EVegan%20avocado%20risotto%3C/p%3E%3Cp%3EAn%20ultra%20creamy%20vegan%20risotto%20with%20avocado%20and%20fresh%20herbs%20-%20perfect%20vegan%20comfort%20food!%3C/p%3E%3Cp%3EHeat%20a%20dash%20of%20oil%20in%20a%20large,%20deep%20frying%20pan%20or%20wok.%20Add%20the%20red%20onion%20and%20garlic,%20and%20cook%20over%20a%20medium%20heat%20for%20at%20least%205%20minutes,%20until%20soft%20and%20fragra
