%20Over%20the%20previous%20weekend%20me%20and%20D%20had%20made%20Spinach%20and%20Ricotta%20cannelloni%20together%20(post%20to%20follow%20shortly),%20and%20were%20left%20with%20just%20over%20half%20a%20tub%20of%20ricotta%20to%20use%20up;%20admittedly%20not%20something%20I%20use%20very%20often%20and%20it%20had%20been%20banished%20it%20to%20the%20back%20of%20the%20fridge,%20promising%20myself%20to%20turn%20it%20into%20pasta%20sauce%20of%20some%20kind%E2%80%A6.However,%20following%20a%20sunny%20Monday%20afternoon%20spent%20perusing%20various%20cook%20books%20on%20the%20chance%20of%20a%20recipe%20using%20up%20the%20ricotta,%20Feast%20came%20up%20trumps%20with%20this%20tempting%20dessert%20recipe.%20Whilst%20the%20original%20recipe%20called%20for%20200g%20ricotta,%20I%20roughly%20scaled%20it%20down%20to%20the%20leftover%20quantity%20and%20took%20it%20from%20there!%20Fortunately%20my%20rough%20calculations%20worked%20a%20treat%20and%20made%20myself%20very%20popular%20with%20D,%20especially%20after%20serving%20up%20a%20meatless%20dinner%20that%20evening!%3C/p%3E%3Cp%3EThe%20Baci%20di%20Ricotta%20puff%20up%20so%20beautifully,%20do%20not%20be%20tempted%20to%20put%20any%20more%20than%20a%20teaspoon%20of%20mixture%20into%20the%20hot%20oil!%20Once%20cooked%20and%20a%20short%20rest%20on%20kitchen%20paper,%20give%20them%20a%20thorough%20shaking%20with%20plenty%20of%20icing%20sugar%20and%20serve%20warm,%20then%20watch%20them%20disappear!%20They%20take%20no%20longer%20to%20prepare%20than%20it%20takes%20than%20to%20heat%20the%20oil,%20and%20I%20will%20be%20definitely%20making%20them%20again.%20They%20are%20so%20light,%20puffy,%20sweet%20and%20yet%20not%20too%20sweet%20at%20the%20same%20time.%20Though%20I%20do%20admit%20part%20of%20me%20was%20thinking%20a%20little%20chocolate%20sauce%20to%20dip%20into%20next%20time%20would%20not%20be%20a%20bad%20thing!%3C/p%3E%3Cp%3EBaci%20di%20Ricotta%20recipe%20can%20be%20found%20over%20on%20the%20Nigella%20website,%20I%20am%20not%20posting%20here,%20as%20per%20the%20Forever%20Nigella%20rules.%3C/p%3E){kind=link}
