Ingredientes

  • 6 lrg tomatoes Salt and pepper
  • 6 x hard-boiled Large eggs -- minced
  • 3/4 c. diced celery
  • 1/3 c. mayonnaise
  • 6 slc bacon -- cooked and crumbled
  • 2 Tbsp. minced fresh parsley
  • 1/4 tsp salt
  • 1/4 tsp pepper Paprika

Direcciones

  1. Wash tomatoes thoroughly. Cut tops from tomatoes; scoop out pulp, leaving shells intact. Chop tomato pulp. Drain tomato shells, and sprinkle cavities with salt and pepper.
  2. Combine tomato pulp, Large eggs, celery, mayonnaise, bacon, parsley, 1/4 tsp. salt, and 1/4 tsp. pepper; stir well. Fill tomato shells with bacon and egg mix. Sprinkle with paprika.
  3. Yield: 6 servings. rdj
