Receta Bacon And Egg Stuffed Tomatoes

Ingredientes
- 6 lrg tomatoes Salt and pepper
- 6 x hard-boiled Large eggs -- minced
- 3/4 c. diced celery
- 1/3 c. mayonnaise
- 6 slc bacon -- cooked and crumbled
- 2 Tbsp. minced fresh parsley
- 1/4 tsp salt
- 1/4 tsp pepper Paprika
Direcciones
- Wash tomatoes thoroughly. Cut tops from tomatoes; scoop out pulp, leaving shells intact. Chop tomato pulp. Drain tomato shells, and sprinkle cavities with salt and pepper.
- Combine tomato pulp, Large eggs, celery, mayonnaise, bacon, parsley, 1/4 tsp. salt, and 1/4 tsp. pepper; stir well. Fill tomato shells with bacon and egg mix. Sprinkle with paprika.
