Bacon And Sour Cream Omelet

Ingredientes

  • 2 x Large eggs
  • 1 Tbsp. Water
  • 4 x Or possibly
  • 5 slc Bacon
  • 3 x Scallions, minced
  • 1/3 c. Lowfat sour cream
  • 1 Tbsp. Butter

Direcciones

  1. Using a fork, beat the Large eggs and water till barely mixed. Fry bacon till crisp. Drain, reserving the grease. Crumble the bacon into the lowfat sour cream.
  2. Saute/fry the scallions in a bit of bacon grease and stir into lowfat sour cream mix. Heat butter in an omelet pan. Pour in egg mix. When omelet is set, spoon lowfat sour cream mix along the center and fold omelet out onto a hot plate.
  3. Yield: 2 servings.
