Bacon Potato Salad

Ingredientes

  • 10 medium new potatoes
  • 1/2 c. light sour cream
  • 1/2 c. light mayonnaise
  • 1/2 c. light ranch dressing
  • 3 T. spicy mustard
  • 6 green onions, chopped
  • 1/4 c. chopped flat-leaf parsley
  • 1 t. salt
  • 1/2 t. pepper
  • 4 slices bacon, cooked and chopped

Direcciones

  1. Slice or quarter new potatoes. Place in a dutch oven, cover with cold water, and cook for 15 minutes or until potatoes are fork tender.
  2. Drain Potatoes, transfer to a bowl, and let cool for about 15 minutes.
  3. Mix together next 8 ingredients and pour over potatoes. Mix gently.
  4. Add bacon and combine with potatoes.
  5. Chill for at least 2 hours.
