Ingredientes

  • plum tomato Pistou
  • 1/2 bn fresh basil, stems removed
  • 3 sprg fresh Italian parsley, stems removed
  • 2 clv garlic, peeled
  • 1/2 c. extra virgin olive oil
  • 1 x salt and pepper, to taste
  • 1 x fresh baguette, sliced 1/2" thick grated Pecorino cheese

Direcciones

  1. Grill whole tomatoes till a dark colour is achieved.
  2. Turn tomatoes oftenremove from grill and trim ends. Cut into 1/4" cubes.
  3. Pistou:In a food processor place basil, parsley and garlic. Pulse till minced.
  4. Add in a little oil and pulse again.
  5. Turn processor on and pour remaining oil in a stream. Season with salt and pepper.
  6. Combine pistou and tomatoes.
  7. Spoon tomato mix onto baguette and top with cheese. Return to grill & heat through.
