- Choose healthy hard brinjals.
- Hold over a direct flame with stalk.
- Turn and proportionately burn until skin is charred.
- Repeat for other brinjal. Cold a bit.
- Hold under running water and gently scrape skin.
- Remove stalks, put brinjal in a large bowl. Mash well.
- Heat oil in a heavy saucepan.
- Add in ginger garlic, stir. Add in onions, stir fry until pink.
- Add in tomatoes, all dry masalas, simmer until oil separates.
- Add in lemon juice, coconut, brinjals, coriander and salt.
- Stir, simmer until oil separates again.
- Garnish with coriander, serve warm with parathas, etc.
