  • 2 med Large seedless brinjals
  • 1 lrg Onion finely minced
  • 1 lrg Tomato grated
  • 1/2 tsp Ginger & garlic grnd
  • 1/2 x Lemon
  • 1 Tbsp. Coriander minced
  • 1 tsp Red chilli pwdr
  • 1/2 tsp Dhania, (coriander seed) pwdr
  • 1/2 tsp Grated coconut
  • 1/2 tsp Garam masala Salt to taste
  • 3 Tbsp. Oil

Direcciones

  1. Choose healthy hard brinjals.
  2. Hold over a direct flame with stalk.
  3. Turn and proportionately burn until skin is charred.
  4. Repeat for other brinjal. Cold a bit.
  5. Hold under running water and gently scrape skin.
  6. Remove stalks, put brinjal in a large bowl. Mash well.
  7. Heat oil in a heavy saucepan.
  8. Add in ginger garlic, stir. Add in onions, stir fry until pink.
  9. Add in tomatoes, all dry masalas, simmer until oil separates.
  10. Add in lemon juice, coconut, brinjals, coriander and salt.
  11. Stir, simmer until oil separates again.
  12. Garnish with coriander, serve warm with parathas, etc.
  13. Making time: 20 min
  14. Makes: 4 servings
  15. Shelflife: fresh or possibly freeze for further use.
