There really is nothing like a good baked chicken. This is a nice change from the traditional way to serve carrots as a side dish. These potato wedges are so good, they make any meal a little more fun.

Remember, adjust the ingredients to the size chicken and amount of carrots and potato's you will be serving and to you liking.

  1. Preheat Oven 350 degrees:
  2. Clean chicken inside and out and pat dry.
  3. Combine the ingredients for the rub in a small dish and set aside.
  4. In a small bowl combine the parsley, garlic, Romano cheese, lemon juice, salt and pepper. Drizzle a little olive oil over the mixture. Gently lift the skin of the chicken and stuff the mixture under the skin.
  5. Rub the chicken skin all over with the rub.
  6. Bake 55-60 minutes depending on the size of the chicken you are baking.
  7. ~ Baked Carrot Sticks ~
  8. Preheat Oven 350 degrees:
  9. In a small bowl combine the brown sugar, vinegar, salt Chili powder, black pepper, garlic powder and olive oil and make a paste.
  10. Smooth this paste on each carrot and place the carrots on a baking pan.
  11. Bake 35-40 minutes until the carrots are tender.
  12. ~ Baked Potato Wedges ~
  13. Preheat Oven 350 degrees:
  14. Slice potatoes into wedges.
  15. In a small bowl combine the basil, lemon juice, vinegar, sugar, salt, red pepper flakes, black pepper, Parmesan cheese and olive oil and stir.
  16. Place the potatoes in a baking pan and pour the mixture over the potatoes and toss.
  17. Bake 45-50 minutes until potatoes are golden and tender.
