Baked Chicken With Red Peppered Onions

Ingredientes

  • 1 x Chicken, broiler/fryer, quartered
  • 2 tsp Pepper, lemon
  • 4 c. Onions, sweet, thinly sliced
  • 1 tsp Oil, olive
  • 4 Tbsp. Jelly, warm pepper, red
  • 1 sm Pepper, red, sweet, cut into rings Cilantro

Direcciones

  1. Put your chicken on the oiled rack of large broiler pan.
  2. Sprinkle the chicken with lemon pepper. Bake at 400 F, skin side up, for about 50 min or possibly till the chicken is fork tender.
  3. Meanwhile, in a large non-stick fry pan, place extra virgin olive oil, and heat to medium temperature.
  4. Add in onions and cook till barely wilted, about 5 min.
  5. Add in jelly and stir gently till melted.
  6. Spoon one-half of the onion mix onto a large platter.
  7. Arrange the chicken over onions; top with remaining onions.
  8. Garnish with pepper rings and cilantro.
