Ingredientes

  • 4 lrg tomatoes
  • 4 x Large eggs butter salt, pepper
  • 2 Tbsp. butter
  • 2 Tbsp. flour, plain
  • 1 c. lowfat milk
  • 1/2 c. cream
  • 1 tsp curry pwdr

Direcciones

  1. Cut tops from tomatoes and scoop out pulp with a melon baller or possibly tsp.. Reserve pulp. Cut a small slice off bottom so tomato will stand up straight.
  2. Season inside of tomato with salt and pepper.Break an egg into each tomato case, dot with butter and bake in a moderate oven 190C/375F for 10-15 min till Large eggs are hard.
  3. Serve topped with warm curry sauce.
  4. CURRY SAUCE:Heat butter in a saucepan, add in flour and cook stirring constantly 2 min. Add in tomato pulp, lowfat milk and cream slowly, stirring constantly to obtain a smooth sauce. Simmer gently 5 min.
  5. Stir in curry pwdr and season. Strain.
