Receta Baked Eggs In Tomato Cups

Ingredientes
- 4 lrg tomatoes
- 4 x Large eggs butter salt, pepper
- 2 Tbsp. butter
- 2 Tbsp. flour, plain
- 1 c. lowfat milk
- 1/2 c. cream
- 1 tsp curry pwdr
Direcciones
- Cut tops from tomatoes and scoop out pulp with a melon baller or possibly tsp.. Reserve pulp. Cut a small slice off bottom so tomato will stand up straight.
- Season inside of tomato with salt and pepper.Break an egg into each tomato case, dot with butter and bake in a moderate oven 190C/375F for 10-15 min till Large eggs are hard.
- Serve topped with warm curry sauce.
- CURRY SAUCE:Heat butter in a saucepan, add in flour and cook stirring constantly 2 min. Add in tomato pulp, lowfat milk and cream slowly, stirring constantly to obtain a smooth sauce. Simmer gently 5 min.
- Stir in curry pwdr and season. Strain.
