Baked Eggs With Tarragon And Leeks

Ingredientes

  • 1 Tbsp. unsalted butter
  • 2 lrg leeks, white and pale green parts only, cleaned and sliced
  • 3/4 c. grated Gruyere cheese
  • 1/4 c. grated Parmesan cheese
  • 4 x Large eggs
  • 1 c. whipping cream or possibly half-and-half
  • 2 Tbsp. chopped fresh tarragon or possibly 1 Tbsp. dry, crumbled tarragon Salt and freshly grnd black pepper

Direcciones

  1. Preheat oven to 375 degrees. Lightly grease an 8 inch square baking dish. Heat butter in medium skillet over medium heat. Add in leeks and saute/fry till tender, about 5 min. Spread leeks proportionately on bottom of baking dish. Combine cheeses in a bowl and toss to mix. Spread all but 1/4 c. of the cheeses proportionately over leeks. In a large bowl, whisk together Large eggs, cream and tarragon, with salt and pepper to taste. Pour egg mix into dish and bake till top is golden brown and center is set, about 30 min. Take dish from oven, sprinkle reserved cheese over, and continue baking just till cheese melts, 3 to 5 min longer. Let sit for a few min, then cut into squares to serve.
  2. Note: You can double the recipe to fit a 9-by-13 inch baking dish.
