.%20%20They%E2%80%99re%20also%20wonderful%20baked%20or%20added%20to%20a%20variety%20of%20soups%20and%20entrees.%20%20Leave%20a%20comment%20below:%20%20How%20have%20you%20prepared%20or%20eaten%20endives?%3C/p%3E%3Cp%3EA%20couple%20of%20weeks%20ago%20I%20attended%20the%20International%20Food%20Bloggers%20Conference%20in%20Seattle%20(IFBC)%20and%20California%20Endive%20was%20there%20with%20some%20product%20samples%20of%20their%20Belgian-style%20endives.%20%20They%20were%20in%20attendance%20at%20last%20year%E2%80%99s%20conference%20as%20well%20and%20both%20years%20I%20had%20the%20privilege%20of%20trying%20some%20of%20their%20endives.%20%20They%E2%80%99re%20the%20only%20major%20Endive%20grower%20in%20the%20USA%20and%20if%20you%20find%20endives%20in%20your%20local%20stores,%20chances%20are%20they%E2%80%99re%20from%20the%20California.%3C/p%3E%3Cp%3ESo%20I%20had%20some%20endives%20on%20hand%20and%20was%20really%20craving%20some%20good%20comfort%20food%E2%80%A6something%20creamy%E2%80%A6something%20cheesy.%20%20And%20so%20I%20threw%20together%20this%20dish,%20we%20invited%20my%20parents%20over,%20and%20everyone%20was%20oohing%20and%20aaahing.%20%20Yes,%20it%E2%80%99s%20that%20good.%3C/p%3E%3Cp%3ELet%E2%80%99s%20get%20started!%3C/p%3E%3Cp%3ESelect%204%20largish%20endives%20that%20are%20about%20the%20same%20size.%20%20White,%20red,%20a%20combination%20of%20the%20two,%20it%20doesn%E2%80%99t%20matter.%3C/p%3E%3Cp%3EGive%20them%20a%20rinse%20and%20slice%20the%20very%20ends%20off.%3C/p%3E%3Cp%3ELay%20them%20in%20an%20oven-proof%20baking%20dish.%3C/p%3E%3Cp%3EPrepare%20the%20bechamel%20sauce.%20%20Yep,%20I%20just%20published%20the%20recipe%20for%20it%20a%20couple%20of%20days%20ago%20and%20now%20you%20have%20the%20opportunity%20to%20put%20it%20to%20good%20use!%20%20This%20version%20of%20the%20bechamel%20is%20altered%20a%20little%20for%20this%20specific%20recipe%20though.%3C/p%3E%3Cp%3EAdd%20the%20ham%20to%20the%20bechamel%20sauce.%3C/p%3E%3Cp%3EPour%20the%20ham-bechamel%20sauce%20over%20the%20endives.%20%20Getting%20excited%20yet?%20%20I%20am!%3C/p%3E%3Cp%3ELook%20at%20that%20delicious,%20creamy%20goodness!%3C/p%3E%3Cp%3EUse%20your%20choice%20of%20Swiss%20cheese.%20%20I%20love%20Swiss%20cheese!%20%20Gruyere%20has%20the%20strongest%20flavor%20and%20Emmentaler%20is%20medium,%20which%20is%20what%20I%20used%20this%20time.%20%20You%20could%20use%20a%20flavorful%20Gouda,%20too,%20or%20even%20a%20white%20cheddar,%20but%20I%20really%20recommend%20Swiss/Emmentaler.%3C/p%3E%3Cp%3ESprinkle%20the%20Swiss%20cheese%20over%20the%20top.%3C/p%3E%3Cp%3ECover%20the%20baking%20dish%20with%20aluminum%20foil.%20%20Preheat%20the%20oven%20to%20350%20degrees%20F.%20%20Bake%20for%2035%20minutes%20then%20remove%20the%20foil%20and%20bake%20uncovered%20for%20another%2020%20minutes%20or%20until%20the%20endives%20are%20soft%20and%20the%20top%20is%20golden%20brown.%3C/p%3E%3Cp%3EServe%20immediately%20and%20enjoy!%20%20(You%20will,%20I%20promise!)%3C/p%3E%3Cp%3EBaked%20Endives%20with%20Ham%20&%20Bechamel%3C/p%3E%3Cp%3E:%20Kimberly%20Killebrew,%20www.daringgourmet.com%3C/p%3E%3Cp%3EServes:%204%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%20degrees%20F.%3C/p%3E%3Cp%3EMelt%20butter%20in%20saucepan%20over%20medium-high%20heat.%20Add%20flour%20and%20whisk%202%20minutes.%20Gradually%20add%20the%20milk,%20whisking%20constantly%20to%20prevent%20lumps.%20Add%20the%20Parmesan%20cheese,%20salt%20and%20nutmeg%20and%20continue%20whisking%20until%20the%20cheese%20is%20melted%20and%20the%20mixture%20is%20smooth.%20Simmer%20for%205%20minutes,%20whisking%20occasionally.%20Remove%20from%20the%20heat%20and%20let%20cool%20for%2020%20minutes.%20Whisk%20in%20the%20egg%20yolks%20and%20stir%20in%20the%20Canadian%20bacon.%20Add%20salt%20and%20pepper%20to%20taste.%3C/p%3E%3Cp%3EArrange%20the%20endives%20single-layer%20in%20a%20baking%20dish.%20Pour%20over%20the%20bechamel-ham%20sauce%20and%20sprinkle%20the%20Emmentaler%20evenly%20over%20the%20top.%20Cover%20the%20dish%20with%20aluminum%20foil%20and%20bake%20for%2035%20minutes.%20Uncover%20the%20dish%20and%20bake%20for%20another%2020%20minutes%20until%20golden%20brown%20on%20top.%20Serve%20immediately.%3C/p%3E%3Cp%3EServe%20as%20a%20side%20dish%20or%20a%20light%20entree%20with%20crusty%20bread%20and%20leafy%20green%20salad.%3C/p%3E%3Cp%3E3.2.2807%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
