Baked Eyeball Egg Casserole

Really fun, gross, kid friendly Halloween Casserole. And it tastes good too! My son loved the gross factor!
I am posting the original recipe. I have made it with fried onions in place of dried onions. I have used cream of chicken when its all I have on hand. I have also added diced green chili's. Change it up however you like. I also add salt and pepper to just the potatoes before I add the other ingredients.
You can lose the gross factor by omitting the ketchup blood shot eyes.

Ingredientes

  • 1 bag (30 oz) frozen shredded hash brown potatoes, thawed
  • 1 can (10 3/4oz) cream of potato
  • 1 container (8oz) sour cream
  • 1 1/2 to 2 cups shredded cheddar cheese
  • 2 tsp minced dried onion
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 10 slices Canadian Bacon
  • 10 eggs
  • ketchup

Direcciones

  1. Heat oven to 350
  2. In lg bowl, mix potatoes, soup, sour cream, cheese, onion, salt and pepper. Spoon into an ungreased 9x13 baking dish.
  3. Evenly arrange canadian bacon slices over potato mixture, press the slices into the mixture to shape deep cups and bake uncovered for about 40 mins.
  4. Remove from oven, if needed, press slices into mixture to reshape the cups. Carefully break 1 egg into each bacon cup. Salt n pepper if desired.
  5. Bake uncovered for another 20-25 mins or until eggs are set.
  6. Decorate eggs with ketchup to look like bloodshot eyes
