.%3C/p%3E%3Cp%3EA%20few%20things%20before%20we%20start:%3C/p%3E%3Cp%3EChoice%20of%20fish%20-%20Traditionally%20made%20using%20Pomfret%20or%20Pearl%20spot.%20But%20any%20firm%20fish%20would%20do%20like%20King%20Fish,%20Tilapia,%20River%20Cobbler,%20Salmon,%20Hake.%20I%20make%20them%20with%20boneless%20fillets%20of%20fleshy%20fish%20as%20it%20is%20easy%20to%20eat.%3C/p%3E%3Cp%3ETo%20make%20it%20spicier%20add%20red%20chilli%20powder%20instead%20of%20kashmiri%20chilli%20powder.%20You%20can%20add%20some%20slit%20green%20chillies%20too.%3C/p%3E%3Cp%3EBest%20made%20in%20a%20plantain%20leaf.%20When%20you%20do%20so,%20first%20make%20your%20leaves%20soft%20and%20pliable%20using%20dry%20heat%20from%20flames%20in%20your%20hob.%20Show%20your%20leaves%20on%20top%20of%20the%20flames%20till%20they%20change%20colour%20from%20light%20green%20to%20dark%20green.%20Make%20sure%20to%20not%20burn%20your%20leaves.%3C/p%3E%3Cp%3EFor%20us%20unfortunate%20souls%20who%20can%20not%20get%20hold%20of%20a%20plantain%20leaf,%20use%20aluminium%20foil%20or%20baking%20paper.%20If%20using%20baking%20paper,%20cut%20large%20squares%20out%20of%20it,%20place%20the%20sauce,%20fish%20then%20sauce%20and%20then%20fold%20your%20paper%20to%20form%20a%20parcel,%20like%20pothichoru,%20and%20tie%20with%20kitchen%20string%20to%20secure.%3C/p%3E%3Cp%3EIf%20you%20don't%20possess%20a%20baking%20oven,%20you%20can%20cook%20in%20a%20pan,%20%E0%B4%A6%E0%B5%8B%E0%B4%B6%20%E0%B4%95%E0%B4%B2%E0%B5%8D%E0%B4%B2%E0%B5%8D%20,%20(smear%20with%20oil%20if%20using%20plantain%20leaf)%20over%20low%20flame.%3C/p%3E%3Cp%3EBaked%20fish%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E1-%20Fish-%20500%20gms%3C/p%3E%3Cp%3E9-%20Sliced%20onion%20and%20tomato%20for%20garnish.%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EMake%20slits%20on%20either%20side%20of%20your%20fish.%20Avoid%20this%20step%20if%20using%20boneless,%20skinless%20fleshy%20fish.%3C/p%3E%3Cp%3EMix%20(2)%20and%20rub%20it%20on%20to%20the%20fish.%20Keep%20aside%20for%20as%20long%20as%20you%20can.%3C/p%3E%3Cp%3EHeat%20a%20large%20non-stick%20frying%20pan%20and%20use%20four%20sprays%20of%20any%20cooking%20oil%20about%201%20tbsp,%20swirl%20the%20pan%20to%20get%20it%20evenly%20coated%20with%20oil%20and%20place%20the%20fish%20fillets%20skin%20side%20down.Fry%20the%20fish%20till%20lightly%20brown%20on%20both%20sides.%20Remember%20you%20are%20going%20to%20bake%20this%20later.%3C/p%3E%3Cp%3ERemove%20and%20drain%20on%20kitchen%20towel.%3C/p%3E%3Cp%3EInto%20the%20remaining%20oil%20%20add%20(3)%20and%20saut%C3%A9%20till%20the%20onions%20become%20translucent,%20do%20not%20let%20them%20brown.%20Remove%20and%20keep%20aside.%3C/p%3E%3Cp%3EIn%20the%20remaining%20oil%20splutter%20mustard%20seeds.%20Make%20a%20paste%20with%20(5).Keeping%20heat%20at%20low,%20add%20the%20prepared%20paste%20and%20cook,%20stirring%20continuously,%20till%20the%20smell%20of%20spices%20hit%20your%20nose.%20Do%20not%20let%20burn.%3C/p%3E%3Cp%3EAdd%20the%20cooked%20onion%20mix,%20followed%20by%20the%20tomato%20paste%20and%20salt.%20Keep%20the%20heat%20to%20medium%20and%20cook%20till%20oil%20separates.%3C/p%3E%3Cp%3EAdd%20the%20coconut%20milk%20at%20this%20point,%20a%20tsp%20at%20a%20time%20and%20stir%20to%20combine%20and%20turn%20off%20the%20heat.%20Your%20sauce%20is%20ready.%3C/p%3E%3Cp%3EAssemble,%20bake%20and%20serve:%3C/p%3E%3Cp%3ECut%20large%20squares%20out%20of%20aluminium%20foil,%20size%20depends%20on%20the%20size%20of%20your%20fish%20fillets.%20Smear%20a%20tsp%20of%20the%20sauce%20in%20the%20middle%20of%20your%20square,%20place%20one%20fish%20fried%20fish%20on%20top%20and%20spoon%20another%20tsp%20of%20sauce%20on%20top.%20Do%20not%20worry%20about%20the%20quantity%20of%20sauce.%20When%20baked%20the%20fish%20will%20ooze%20our%20water%20and%20the%20consistency%20of%20the%20sauce%20turns%20right.%20Now%20lift%20all%20four%20sides%20of%20the%20foil,%20bring%20them%20together%20at%20the%20centre%20and%20crimp%20to%20make%20a%20parcel.%20You%20can%20leave%20this%20to%20rest%20and%20the%20flavours%20to%20combine%20in%20the%20fridge%20till%20ready%20to%20bake.%3C/p%3E%3Cp%3EWhen%20ready%20to%20bake%20,%20preheat%20the%20oven%20to%20180C%20fan.%20Bake%20for%2020%20minutes.%20Take%20it%20out%20and%20check%20if%20the%20fish%20is%20done.%20If%20it%20flakes%20off%20easily,%20then%20you%20are%20good%20to%20go.%20Or%20else,%20cook%20for%20a%20further%2010%20minutes.%3C/p%3E%3Cp%3EServe%20garnished%20with%20one%20slice%20of%20onion%20and%20one%20slice%20of%20tomato%20each.%3C/p%3E%3Cp%3EAdapted%20from:%20Flavours%20of%20the%20Spice%20Coast%20by%20Mrs%20K.%20M.%20Mathew%3C/p%3E%3Cp%3EAlso%20check%20out%20an%20easier%20version%20which%20my%20mum%20makes.%3C/p%3E%3Cp%3EIf%20you%20found%20this%20post%20useful,%20I%20would%20really%20love%20for%20you%20to%20pin%20it%20or%20share%20it%20with%20your%20Facebook%20fans%20or%20Twitter%20followers%20or%20Google+%20circles%20please%20using%20the%20buttons%20below%20and%20keep%20me%20motivated.%3C/p%3E%3Cp%3EThank%20you%20xx%3C/p%3E%3Cp%3ECheers%3C/p%3
